Paul's Pumpkin Bars

These are delicious and moist. I replaced half of the oil with applesauce to cut back on fat. I also added a teaspoon of pumpkin pie spice. They're so good they don't even need frosting!

Broccoli Cheese Soup

Ginger Snaps II

These ginger snaps are soft and delicious! I doubled the ginger and cinnamon, as others had suggested. I also ended up adding a bit of extra flour- about 1/4 a cup- and I would recommend that anyone else baking at high altitude make the same adjustment.

Waffles II

These waffles are perfect. I'm always altering recipes, but I follow this one exactly. I'll often make a double batch so I have some to freeze. I just pop a frozen waffle in the toaster and it comes out great!

Cranberry Orange Bread

I LOVE this bread! The sweetness of the bread is the perfect contrast to the tartness of the cranberries. I'm not a big raisin fan, so I added extra cranberries instead of raisins. I also added about a tsp of cinnamon. I think I might try adding a couple of tablespoons of rum next time. Such a great recipe!

Pumpkin Spice Bread

This recipe is amazing! I only used about 2-1/3 cups of sugar, and I found it to be sweet enough. I also took the advice of some other reviewers and used 1/3 cup oil, 1/3 cup applesauce, and 1/3 cup low-fat sour cream, just to try to cut out some fat. The bread turned out to be dense and moist and delicious!

Pancakes I

These pancakes are delicious, but they turned out thinner than what I'm used to. I rolled them up with blackberries and whipped cream and served them more like crepes. I will definitely make them again... just not when I want a fluffy pancakes.

Blueberry Streusel Muffins

This is a good recipe! I skipped the streusel and substituted low fat sour cream for about a third of the butter- just to try and cut out a few calories- and they still turned out great!

Cream Cheese Frosting II

This is my new favorite frosting! I've made it for several different cakes, and it's good on everything. It turns out just as delicious with low fat cream cheese. I added a little bit of lemon juice to it when I made a lemon cake, and it was great.

Easy Cucumber Salad

This salad is delicious! My fiance doesn't like mustard or anything creamy like sour cream or mayo, which limits the kinds of salads I can make for him. It's great to have an easy salad recipe that we both enjoy!

Chicken Noodle Casserole I

I've made this recipe several times, and every time I make it I do it a little different. I've made it exactly as written, and I've tried some of the suggestions from other reviews such as adding vegetables, onion, garlic, and various seasonings. No matter what I do, it always turns out great! I usually use low fat soups and sour cream, and it doesn't change the taste at all. The last couple of times I've made it I've crumbled the crackers on top without the butter... it only cuts back on flavor a little bit and it cuts back on a lot of fat.
