Pan-Poached Alaskan Salmon Piccata

We thought that this recipe was delicious. I served it over spaghetti with a butter/olive oil and dried (all I had) parsley sauce. It was yummy. I am sure that you could sub chicken for the salmon very easily.

Best Marinara Sauce Yet

This was excellent! My only problem was that I had a hard time getting the parsley to soften up. I made it on a lazy afternoon and let it simmer along for a couple of hours. I served it the next day as the sauce for chicken parm! Very, very yummy!

Banana Banana Bread

This will take care of a ton of over-ripe bananas for you. It is very moist and stays that way for a long time. I think that I had to cook it longer than was stated but I probably could have made a couple of smaller loaves to cut the cooking time down.

Rhubarb Stir Cake

This is an excellent rhubarb recipe. The dough is very, very stiff but the cake is extremely moist and delish! The only change I made was to switch the nutmeg out and use cinnamon. The topping makes a nice sugary crust on top.

Make Ahead Lunch Wraps

Delicious. I threw in a deli chicken cooked in taco seasoning and substituted refried beans for the pinto beans. These were really, really good. I also halved the recipe and we made 6 burritos for dinner and have lots leftover for next weeks lunch. A definite keeper.

Butternut Squash Bisque

I used a hand held stick blender in the pot to blend...this eliminates the hot blender explosions that can occur! Also, left out the heavy cream and put a dollop of plain non-fat yogurt on top. This was delicious!

Chicken Fried Chicken

This recipe is excellent. I pounded them with a meat mallet and then cut them into stips (chicken fingers)added a little garlic powder and then I breaded them and put them in the frig until I cooked them for dinner. I served them with BBQ sauce and honey! YUM!

Overnight French Toast II

OMG...this is delicious!! I subbed real maple syrup for the corn syrup and the whole kitchen smelled delish when it was cooking. I think that this would be another great Christmas morning goodie! We didn't have problems getting the leftovers out of the pan. Reheated them the next day in the microwave! Try this...it's great!!!!

Favorite Old Fashioned Gingerbread

This Gingerbread was excellent. Even those not usually impressed by this type of dessert loved it! Add one big dollop of whipped cream and you are good to go! DE-LISH!

Bulgur Chickpea Salad

This is excellent and easy! It does taste like tabboulleh (Lebanese tomato and parsley salad). It is much quicker to make...not as much chopping involved. I use the bagged shredded carrots. How simple can it get? Tastes even better on day 2!

Glazed Meatloaf II

I made this a few months ago and didn't rate it right away. I am NOT a big fan of ground beef or meat loaf, but that being said, I have to say~ this was delicious! I fried the onions in a little oil to soften them. I also doubled the glaze (as some suggested). It was wonderful. I served it with mashed potatoes. Will make it again for sure!

Rhubarb Sour Cream Pie

This was delicious. I subbed Greek-style strained fat-free yogurt for the sour cream and cut the sugar by 1/4 cup as suggested by some reviewers...it was YUMMY! Also used No Fail Pie Crust III from this site.

No Fail Pie Crust III

I cut this recipe in half...didn't need 4 crusts! This turned out really good...I like that it didn't have shortening in it...we have a cholesterol issue over here! Also, I used SmartBalance in place of the butter...I usually do that and have very good results!
