Guacamole

Pumpkin Cheesecake in a Gingersnap Crust

This came out beautifully...no cracks. Lovely presentation. Might go with a plain gingersnap crust and leave out the nuts...not a big fan. Very good and quite easy too.

French Bread Rolls to Die For

These rolls were simple to make. I am always eager to try new bread/roll recipes. I messed up and used 2 cups of reg. flour before I saw that it was supposed to be bread flour. It didn't seem to make any difference. The result was a soft, tender delicious roll. Tastes like a bakery roll!

Shredded Beef Enchiladas

I have to say that I am somewhat disappointed with this "5 star" recipe. We all thought that it was kind of blah. Maybe a pkg. of taco seasoning or something would have helped give it a little zip. I used sirloin steak instead of chuck roast but that couldn't have made that much of a difference! I might give it a try with chicken as suggested by another cook.

Basic Crepes

These really ARE simple and delicious! They come out looking and tasting like a restaurant! I filled mine with apple pie (canned) filling because I was short on time. Next time I would go with a scoop of vanilla ice cream, sliced banana and some maple syrup...topped with a dollop of whipped cream! YUMMY! These can be whipped up while someone is clearing the dinner table or made in advance and refrigerated.

Watermelon Fire and Ice Salsa

This was a different approach to salsa. Very good after it had time to meld the flavors together. I served it with tortilla chips. I left out the cilantro (personal preference).

Clone of a Cinnabon

My daughter raved about these. Definitely NOT for the calorie conscious. Mine were popping right out of the pan. You could probably cut them a little smaller and make more. The frosting makes them! YEOW!

This is THE BEST! It is refreshing and delicious. I know you can change the pudding flavors around. I use the cheesecake pudding and it get raves. It is well worth the preparation. Definitely a keeper! Thank you Joy!!!

No Bake Peanut Butter Pie

Easy and delicious! I did what another reader suggested and put a layer of fudge sauce on the crust before the peanut butter filling. It was YUMMY! I make this whenever we are in the mood for something sweet, quick and easy...in other words, often! ;)

Bulgur Chickpea Salad

This is excellent and easy! It does taste like tabboulleh (Lebanese tomato and parsley salad). It is much quicker to make...not as much chopping involved. I use the bagged shredded carrots. How simple can it get? Tastes even better on day 2!

Favorite Old Fashioned Gingerbread

This Gingerbread was excellent. Even those not usually impressed by this type of dessert loved it! Add one big dollop of whipped cream and you are good to go! DE-LISH!

Chantal's New York Cheesecake

This was excellent. I baked it in a water bath and left it in the oven for at least 4 hours after cooking. It did not crack. I served mine with a rhubarb sauce that I made from frozen rhubarb. The sweet tartness was absolutely delicious with the creamy cheesecake! Definitely a keeper.
