Corn Chowder I

This is an excellent soup. It makes a ton of soup. For the 8 cups of milk I used 1 qt of fat-free 1/2 & 1/2, 1 can of chicken broth and the rest 1% milk. I also used 2 cans of creamed corn and 1 whole niblets, drained. Great for a cold winter night!

Amazing Pecan Coffee Cake

It really WAS amazing! Made it in a bundt pan w/ the topping in the middle. We had it for dessert. Delish!!!

Pretzel Turtles

These were good. I used small twisted pretzels w/ DOVE caramel chocolates and toasted pecans. The only complaint would be that I had to keep them refigerated to keep them from being too soft and melty!

Peanut Candy Bar Cake

These went over pretty well but personally I think that there was just too much going on...the cake base, the marshmallows, the chips, the cereal and then the nuts... good flavor but very sweet and like I said, just too busy for my tastes!

Herbed Greek Roasted Potatoes with Feta Cheese

These were excellent! I only used like 5 large potatoes because their were only 3 for dinner that night. I forgot the oregano & feta because the potatoes were cooked in the first 40 minutes. I have to say that they garlic & lemon flavors were delicious and will be making these again soon~ planning on using ALL ingreds next time!

Key Lime Pie VII

This was not only simple it was delicious! I imagine you can make this same pie using lemon. I made a home made graham cracker crust and baked the crust first then the pie for the suggested 10 mins. Delish! Very refreshing!

Sesame Noodles

I have to say, these were delicious! I wish that I had thickened them w/cornstarch as suggested by others. But, the flavor was right on! I used 3 Tbs of sugar and 3 Tbs of canola oil as suggested and loaed them up w/ sliced scallions, baby cukes and par-boiled broccoli. The sauce does tend to pool to the bottom of the dish but we jst turned them a few tims before serving and they were fine. I used the fresh linguine (as suggested but could only find it in 12 oz pkg.). Four of us pretty much ate the whole batch. Would double the linguine next time and probably would have enough liquid as is. Definitely worth trying!

Chunky Marinara Sauce

This was excellent! I doubled the recipe and upped the garlic cloves to 4! Also used crushed tomatoes because that is what I had on hand. I sort of screwed up on the seasoning because I used 1 tsp. of each: basil and oregano (should have been 1/2 tsp.) but, everyone said that it was delicious so will probably do it the same way next time. I served this over fresh cheese tortellini. It was delicious!

Creamy Spiced Coleslaw

This coleslaw was excellent! I did as others suggested and used 3/4 c. mayo and 1/4 c. sour cream. I had put all of the dressing ingredients together and added a bag of pre-packaged coleslaw at the last minute. Didn't have the hour to let it chill but I have to say it was excellent anyway! Have to think that it would be even better after chilling! This is delicious!

Flaky Food Processor Pie Crust

This was an "ok" recipe. Easy because it is made in the food processor but I found it kind of crumbly to roll out. Also...it only makes a single crust. Wish this was specified on the recipe itself!

Classic Tiramisu

I thought that this was DELICIOUS! For the 1 1/4c of mascarpone I used an 8oz container of local mascarpone and then used 4oz cream cheese, 1/8 cup sour cream and 1 Tbs fat-free 1/2 & 1/2 . I know it was more than the 1/4 c. that was called for but at this point who cares? I also used the whole pint (2c) of whipping cream instead of the called for 1 3/4c. Because I have some "non-alcohol" peeps, I used a scant 2 Tbs. of kahlua and then filled the rest of the 1/3 c with strong instant coffee. It was EXCELLENT! I made this in my trifle bowl and refrigerated it overnight. It presented well and the lady fingers absorbed the coffee/liquor and were soft and delicious! Definitely a keeper! TRY THIS!

Clark's Quiche

This was very good! I followed advise from others and pre-cooked the pie crusts for 5 mins. before filling them. I also used fresh baby spinach that I sort of cut up before adding to the sour cream & s&p. It was easy and tasted fine. I have to say, they smelled delish while cooking and there is a good chance that I will be making this again.

Black Magic Cake

Yummy! Very chocolatey and moist. I frosted this with a mocha icing to compliment the coffee that is in the cake. Served this after a huge assortment of finger foods on Christmas Eve, so don't think that anyone had any real room left for dessert. I do have leftovers though so I will pull it out again and ask the experts what they think of the recipe! Thanks Marsha!

Meatball Nirvana

I used these with my grape jelly, chili sauce cocktail meatball recipe. Think they have a little too much of the "rosemary" flavor to go with the sauce. I think that they would be really good in spaghetti sauce tho. I will definitely try them again in a tomato based sauce.

Charleston Breakfast Casserole

I make this for Christmas morning. Delicious! I used a little more bacon because I had it left from another recipe. When the bacon was done, I poured off the fat but cooked 1/2 of a small onion in the residue and added that to the egg/ pepper mixture. Also used seasoned organic croutons and upped the eggs to 8 and the milk to 2 cups as suggested by others. This is really good and easy for Christmas morning when you are running around doing other things. Pop it into the oven and you are good to go!

Slow Cooker Italian Beef for Sandwiches

Good flavor. Absolutely a great dish if this is what you are in to...easy crock pot meals. My SIL loved it and the rest of us enjoyed it as well just not a favorite presentation-wise!

Baked Pork Chops I

Maybe it's me...I cut the recipe down to 3 chops. Pan seared them in evoo and made all of the sauce. Cut the cooking time down to 25mins then 20. They were still kind of tough and thoroughly cooked. Good thing I read the reviews and didn't cook for the whole time. These were beautiful thick center cut chops...wish I could find a "perfect no-fail recipe for them!"

Apple Bavarian Torte

I too microwaved the apples for 3 mins. turning every minute. Then I did 2 layers of the filling...cream cheese, apples repeat. Smelled yummy and was very good. Really best served warm out of the oven. Bet it would be great with a scoop of vanilla ice cream!
