Aunt Norma's Rhubarb Muffins

These are excellent muffins. Unfortunately I must have blinked or just blanked out where it said it makes 24 muffins. I only prepared one pan and then was surprised that I had so much left over batter! Well I used a mini muffin pan for the rest and even though they overflowed a bit, they were delicious! Love rhubarb recipes!!!

Michael's Foccacia Bread

OMG! This is delicious!!! Made this for the first time last week. We didn't put the rosemary in it because some don't care for it. We did however, add sliced green and black olives and crushed garlic to the grated parm. It was delicious! I made it again last night and crushed the garlic directly into the dough along with the onions... topped this with shredded mozzarella, sliced tomatoes and grated parm. I put the leftovers into a ziploc bag and it was moist and delish the next day as well! Try this!

Chicken Enchilada Casserole II

I read all the reviews for this recipe and actually opted to impliment some on my first try...I too used 1/2 the sour cream (8oz). I used a rottisserie chicken that I cooked in taco seasoning and water. I used cup up corn tortillas, 1 can of black beans, 1 can of Bush's Chili Beans, sm can of sliced black olives, cr of chic soup, 2 cups of shredded Cabot Cheddar cheese and a 16 oz jar of Frontera Medium Salsa. All in all a good recipe. It was a little more calorie laden than I usually like but a good "comfort food!"

Pie Crust IV

This was a good crust. Nothing spectacular but good. Next time I think that I might sub 1/4 cup of butter forthe same amount of shortening. I wish that it specified that it only made a single crust. All in all a decent crust tho.

Rhubarb Stir Cake

This is an excellent rhubarb recipe. The dough is very, very stiff but the cake is extremely moist and delish! The only change I made was to switch the nutmeg out and use cinnamon. The topping makes a nice sugary crust on top.

Grilled Marinated Shrimp

EXCELLENT! I doubled all og the ingredients because I had the whole fam. Everything was delish...I cut the hot sauce down a smidge and used "Frank's Red Hot Wings Buffalo Sauce." I subbed catsup for the tomatoe paste as suggested and waited til the last 1/2 hr or so to add the lemon to the marinade. It turned out great. Didn't take the full 5 mins/side to cook. We also used some of the extra marinade to drizzle onto Romaine lettuce and grilled that too to serve the shrimp on. Another good reviewer's suggestion. The whole meal was a hit. Easy to prepare ahead of time and quick cooking so you can actually enjoy the meal! Thank you Robbie Rice!!!

Corn Chowder I

This is an excellent soup. It makes a ton of soup. For the 8 cups of milk I used 1 qt of fat-free 1/2 & 1/2, 1 can of chicken broth and the rest 1% milk. I also used 2 cans of creamed corn and 1 whole niblets, drained. Great for a cold winter night!

Pretzel Turtles

These were good. I used small twisted pretzels w/ DOVE caramel chocolates and toasted pecans. The only complaint would be that I had to keep them refigerated to keep them from being too soft and melty!

Peanut Candy Bar Cake

These went over pretty well but personally I think that there was just too much going on...the cake base, the marshmallows, the chips, the cereal and then the nuts... good flavor but very sweet and like I said, just too busy for my tastes!

Herbed Greek Roasted Potatoes with Feta Cheese

These were excellent! I only used like 5 large potatoes because their were only 3 for dinner that night. I forgot the oregano & feta because the potatoes were cooked in the first 40 minutes. I have to say that they garlic & lemon flavors were delicious and will be making these again soon~ planning on using ALL ingreds next time!

Key Lime Pie VII

This was not only simple it was delicious! I imagine you can make this same pie using lemon. I made a home made graham cracker crust and baked the crust first then the pie for the suggested 10 mins. Delish! Very refreshing!

Sesame Noodles

I have to say, these were delicious! I wish that I had thickened them w/cornstarch as suggested by others. But, the flavor was right on! I used 3 Tbs of sugar and 3 Tbs of canola oil as suggested and loaed them up w/ sliced scallions, baby cukes and par-boiled broccoli. The sauce does tend to pool to the bottom of the dish but we jst turned them a few tims before serving and they were fine. I used the fresh linguine (as suggested but could only find it in 12 oz pkg.). Four of us pretty much ate the whole batch. Would double the linguine next time and probably would have enough liquid as is. Definitely worth trying!

Chunky Marinara Sauce

This was excellent! I doubled the recipe and upped the garlic cloves to 4! Also used crushed tomatoes because that is what I had on hand. I sort of screwed up on the seasoning because I used 1 tsp. of each: basil and oregano (should have been 1/2 tsp.) but, everyone said that it was delicious so will probably do it the same way next time. I served this over fresh cheese tortellini. It was delicious!

Creamy Spiced Coleslaw

This coleslaw was excellent! I did as others suggested and used 3/4 c. mayo and 1/4 c. sour cream. I had put all of the dressing ingredients together and added a bag of pre-packaged coleslaw at the last minute. Didn't have the hour to let it chill but I have to say it was excellent anyway! Have to think that it would be even better after chilling! This is delicious!

Flaky Food Processor Pie Crust

This was an "ok" recipe. Easy because it is made in the food processor but I found it kind of crumbly to roll out. Also...it only makes a single crust. Wish this was specified on the recipe itself!
