Irish Chicken and Dumplings

OMG. Hands down the BEST chicken and dumplings I've ever had! I've made this several times, and it turns out perfectly. I'm a bit of a health nut, so the only modification I make is I use reduced fat/fat free soup. Other than that, I follow the recipe exactly. You won't be disappointed!

Easy Pork Chop Casserole

This wasn't bad, but not the best I've had. I give it 4 stars because of the simplicity of preparation. I personally had to make my own modifications to give it enough flavor. My husband and I are avid spice fans. I felt the recipe as it is didn't have the flavor we were looking for.

Cinnamon Apple Syrup

Very easy and simple. I actually substituted pears for the apples. Other than that, I followed the recipe exactly. I baked little shortcakes while the pears were cooking and made my own whipped cream to go on top. Yummy!

Enchilada Casserole III

Great recipe! I make something similar, but this one is way easier. The only modification I made is I used flour tortillas, I added green chilis to the meat/bean mixture, and I used taco seasoning and dry onion soup to spice up the meat. My picky 9-year old had two plates!

BREAKSTONE'S Fruit-Filled Coffee Cake

The first time I made this, I followed the recipe exactly. I give it 3 1/2-4 stars as it is. It's a good "base" recipe. To make it 5 stars, I made the following modifications: I used 3 egg whites, no yolk. I added 1/4 cup unsweetened apple sauce to moisten the cake up. I also added 1 tsp vanilla and 1 tsp almond extract to the batter. Finally, instead of using milk for the glaze, I used lemon juice. The lemony taste compliments the sweetness of the powdered sugar. After making these modifications, I give it 5 stars.
