Grilled Delmonico Steaks

I pared this recipe down to 2 servings and out of necessity, had to change it a little bit...I didn't have steak seasoning, so instead, I added 1 Tbsp of Lawry's seasoned salt, 1 Tbsp of garlic powder, 1 Tbsp onion powder (still added fresh garlic and onion that it asked for as well). We ended up letting it marinate for over 24 hours...more like 31 hours, so I'm sure that made it even yummier :-) Even before the hubby had the steak, he kept commenting on how good the marinade was, and he absolutely loved the end product. Thisis the second time I've made this (the first time I followed the recipe exactly, except I didn't have a food processor at the time, so everything wasn't well blended and it ended up just tasting "ok") We will definitely make this again - blended, definitely!!

Roast Sticky Chicken-Rotisserie Style

Great!! I've made this a couple of times now and it's always turned out juicy on the inside and crispy skin on the outside. I love the spice combo. I made it pretty much exactly as written (but didn't have white pepper any of the times I've made it...who does??) I will continue to keep this in the dinner rotation!!

Roasted Brussels Sprouts

I didn't go exactly how this was written...I went by another poster's suggestion to bump up the oven temp to 425 and roast for about 15 minutes only. Came out perfectly! I also used sea salt instead of kosher salt. Yum!

Mexican Casserole

This is definitely a keeper! I followed several suggestions from other reviews: I sauteed one whole medium yellow onion, sauteed the chicken (I used 1 lb instead of 3/4 lb), then added the beans (I drained and rinsed them first), the corn UNDRAINED and a 15 oz can instead, an entire jar of salsa, added a 4 oz can of green chiles and about a handful of cilantro. I didn't add any extra water as the recipe suggested and it turned out fine...the water from the can of corn and salsa was enough. I also added a cup of instant brown rice and mixed thoroughly just before putting in the oven. When it was done, I added a dollop of sour cream on the top to mix in. The hubby and I both liked this one! He went for seconds :-)

Asian Lettuce Wraps

Delish! As the hubby said, definitely memorable! I used the sauce that a few people had mentioned (2 Tbsp soy sauce/1 tsp rice vinegar/1 Tbsp sesame oil and added 2 Tbsp chili-garlic sauce instead of "chili paste"...couldn't find that at the store. Oh, and I added about a tsp of fish sauce as well) I didn't use hoisin sauce as I didn't have any on hand. I also added a bunch of veggies: 1 8 oz can water chestnuts, about 1 1/2 cups of mushrooms, 3/4 of a carrot (finely sliced), green onions, fresh ginger, 2 big shallots instead of an onion, and the garlic as recommended. I used a lb of ground turkey, browned it in about a Tbsp of sesame oil instead of "cooking oil." I used a bit more sesame oil to stir-fry all the veggies. Overall, awesome!! I will say that the 2 Tbsp of chili-garlic sauce made it spicier...I'm a bit of a puss when it comes to spice. Any more, and it would have been too much for me!!

Slow Cooker Mashed Potatoes

Honestly, for all the calories that are in it, I was disappointed. Maybe because I did forget a few things...I forgot to add the garlic and also left out the chicken bouillon to accommodate my vegetarian guests. I also didn't add the full recommendation for butter at the end because I ran out, so maybe I added 2 Tbsp in stead of 1/2 cup. So, just with the sour cream and cream cheese and a little bit of salt & pepper, it left it tasting rich but bland (is that possible?!) I like the idea of using the crockpot to save time, but really, what's the real point, if you're doing everything you normally would to mashed potatoes (adding the extras and mashing everything up) after boiling the potatoes and just sticking it in the crockpot to keep it warm? It takes the same amount of time... In the future I'll just stick to my usual milk/salt/ and lots of butter routine. Maybe I'll try the chicken bouillon next time, it does sound yummy, but I'll leave out the cream cheese.

Grandma's Corn Bread Dressing

I've made this each year for Thanksgiving for the past 3 years (at least) and for some reason this year, I realized that it is way too moist for me, that it takes away from the nostalgic dressing/stuffing from my childhood! I think it tastes great, but the texture is off. I think next year I will make more corn bread to add to the mix, as well as less chicken stock to make it "breadier." Overall, I love the taste!

Southwestern-Flavored Ground Beef or Turkey for Tacos & Salad

I agree with the ratings that said that this was bland. I was hopeful, so tried it anyway. I have a bad palate, but I know what I like, and it was just missing "something." I don't know what! More salt, maybe? And something to give it a little more kick.
