Russian Carrot Salad

Five stars for ease and tastiness. I used half walnuts and half soaked raisins (ran out of the former). Also used organic canola mayonnaise. I need a food processor though. Took me a while to shred those carrots by hand.

Curried Cauliflower Soup

Very good soup. I was very liberal with the curry paste. I added a healthy dash of cayenne along with tumeric, tarragon, and curry powder in generous proportions. I used light coconut milk and a dollup of fat free greek yogurt for good measure. It came out well. Thanks so much for sharing this recipe. It's great for cold winter nights.

Pasta Primavera

Easy and yummy. Making it for the BF's parents made me feel like a professional. I used cream instead of milk. I used vegetable bullion instead of soup mix. I also threw in some frozen peas and corn (after all, it wouldn't be primavera without the veggies!). It was rich and filled everyone up. Thanks rulu930!

Sesame Tilapia

Followed it to a 'T' (except perhaps I was heavy on the garlic). We found it a bit bland for our tastes. Perhaps we are so used to fish with stronger spice. Eatable but not our favorite. Worth the try though!

Easy Mushroom Rice

Yum! Rich. I too sauteed fresh mushrooms with garlic and shallot. I also used vegetarian bouillon (prepared in water of course) and cream of mushroom soup. Last bit of changing was with the butter. I used a bit of canola oil instead. Good recipe.

Roasted Onions

Really good and really easy. I cut the onions up into fourths instead of halves. Next time, I am going to make sure I do peel them and cut off the end bits.

Busy Mom Peach Cobbler

Oh Boy. Did I mess up. I found a 15 oz. can of peaches that were not in heavy syrup. I tried to make up for it by adding a bit of simple syrup I had on hand and also by cutting a wee bit down on all the other ingredients the recipe called for. What resulted was a bit disastrous. I cooked it for the maximum time suggested (45 min.) which over-caramelized the "crust" and rendered it rubbery and essentially uneatable. My bad. I am going to try again because I see potential...

Sauteed Swiss Chard with Parmesan Cheese

This was surprisingly yummy. I always expect chard to be bitter and this wasn't. Even though the recipe did not call for it, I added a handful of raisins (to give some sweetness, thanks to the idea of another member). I also gave it a healthy dose of cayenne because that's how the boyfriend rolls (with the heat). Really good with swordfish and mashed potatoes. Will make it again, and most likely, again. Marrakesh Vegetable Curry

This is an excellent dish! I made it with more cayenne than called for and it was super hot. I also substituted portabella mushrooms for the eggplant (the bf does not like aubergines) and added a bit more of the other veggies to compensate for the lack of zucchini (the finicky bf hates them). Didn't miss either a bit. Also, I threw in some cubed tempeh for a meatier consistency. I am very happy with the results! Thanks Niblets!

E-Z Marinated Swordfish

This was delicious. Even I loved it and usually I am very discerning when it comes to stars. It was moist and savory. I broiled it a bit longer (two minutes more) on the second side because lately the swordfish recipes I have using leave it a little undone. This was truly perfect. Thank you Ozahiru...

Hudson's Baked Tilapia with Dill Sauce

Super quick, easy, and inexpensive. The BF likes it lots too. The dill sauce keeps as well and can be used with other dishes. I use canola lower-fat mayonnaise and it tastes quite good. Served with coconut rice and broccoli. Good Friday night dish after a long workweek and a couple of happy hour cocktails at the pub.
