Garlic Shrimp Pasta

I made a lot of modifications and it turned out great. I sauteed the garlic in olive oil and butter. Then I added the shrimp, 2 tomatoes, about 1 tsp of lemon juice, dash of pepper, dash of cayenne pepper, onion powder and about a tsp of tarragon. Served with the parmesan cheese. We loved it!

Chili with Ground Pork

3 1/2 stars. Husband thought there was 'too much going on' in the chili, but I liked that there were a lot of vegetables. I added a lot of the spices because without them, I don't think there would have been a lot of flavor.

Turkey Tetrazzini II

I sauteed 1 onion, 4 cloves garlic, and 2 celery stalks in olive oil. I added 8 oz. of sliced mushrooms. I cooked elbows. I topped with butter/breadcrumb combo. This made a lot! I had enough to divide it in three dishes. **The 2nd time I made this, I used ground chicken. It was also good, but not quite as tasty as the shredded turkey breast.

Shrimp Bisque

I say 4, but my husband says 5. I followed another reviewer's advice by using an additional 1/2 of a red peppers and a cup or so of cherry tomatoes. I used a vidalia onion. I omitted the butter. I put almost all of the soup in the blender. The consistency didn't look so great, but it tasted good. I added almost 1/2 cup Parmesan cheese to the soup before serving, but felt it needed something else so added a little garlic powder and parsley.

Slow Cooker Beef Stroganoff I

I followed the first reviewer's suggestions. They were great. Added pepper and 3 cloves garlic. Doubled the soup and water. Do not use Cream of Mushroom. Reduced the cooking time to about 6 hours on low and 1/2 hour on high. Added a "dollup" of sour cream when I added the cream cheese. Added a beef bullion cube. Added a half packet of onion soup mix. Added 8 oz package of sauteed mushrooms 1/2 hour before serving. Served over egg noodles. Absolutely loved it! The beef was so tender and the sauce was tasty! I also served it with bread to soak up the extra sauce. I froze the leftovers.

Baked Coconut Shrimp

Very good. The shrimp I used were jumbo, 15 count in 1 lb. I added a dash of ginger to the cornstarch mixture. I pulsed the coconut in the food processor. I didn't need a full 2 cups. I also only needed 1 egg. I didn't have any trouble with the coconut falling off. I put the shrimp in the fridge for 30 minutes or so before baking. They turned out great, and I would make these as an appetizer. I used the 'Sesame Dipping Sauce' from this website. It was tasty. We also tried the 'orange marmalade, ranch dressing, hot sauce' recipe someone wrote about in their review. It was ok, but we liked the other sauce better.

Banana Wheat Muffins

I halved the recipe because I only had one banana. I added vanilla, cinnamon, and a dash of nutmeg. It could have used a bit more spice. I added 1 tablespoon of water because they seemed a little dry. They turned out great. They are especially good warm. We made a few with raisins, which were also quite good.

Quick and Easy Chicken Noodle Soup

This was very good. I sauteed 2 cloves of garlic before adding the vegetables. I used a 32 oz box of chicken broth and a 32 oz box of vegetable stock. I cooked the chicken in the slow cooker and shredded it.

Sour Cream Chicken Paprika

We would give it 3 1/2 stars. I think the chicken itself was a bit bland; it didn't absorb a lot of the flavor from the sauce. The sauce was very good. Perhaps shredding the chicken would be better. This time I cubed it. I also sauteed 5 cloves of garlic before adding onion (2 cups), celery, and carrots. I put a pinch of black pepper and cayenne pepper in with the paprika. I used only 1 cup of chicken broth. I actually thought it may not have been quite enough liquid.

Colorado Buffalo Chili

This was good. I didn't find an anaheim pepper, so I used 1/2 a jalapeno and 3/4 a green pepper. It was a bit too spicy. Next time I think I'll leave the jalapeno out. It was a little too overpowering. We tried this a second time and substituted a cubanelle for an anaheim pepper. It was good, but still a bit spicy. I think next time I will cut back on the red pepper flakes a bit. My two young children thought this was too spicy. I have made this many times and have made changes to suit our taste. I use a cubanelle pepper, a poblano pepper, a banana pepper, and a bell pepper. I use a bit less than 1/2 tsp of red pepper flakes and 1/4 tsp of cayenne pepper.

Baked Homemade Macaroni and Cheese

We loved this! I made a half batch, just to be sure we'd like it. I added a dash of pepper, paprika, and dry mustard. I thought it looked a little too saucy, so I made a little more pasta to put in. I like macaroni that isn't too liquidy. I used parmesan breadcrumbs instead of crackers. It was so good! (4 cups of shredded cheese = 1 lb)

Beef Brisket My Way

Very good. I didn't have any celery, so I had to omit it. I used a 2.5 lb brisket and halved the recipe. I cooked it for a bit less time, due to the smaller size. It was about 2 hrs 15 min until I added the carrots and then another 1.5 hours. It turned out very tender and tasty. The sauce was good on mashed potatoes. My 4 year old son liked it.

Slow Cooker Beef Stew I

I followed the recipe as is, except I added mushrooms. It was very good. We felt it needed a little more flavor though. I think next time I'll try adding thyme or marjoram. The beef was very tender, and both kids loved that!
