Garlic-Lemon Double Stuffed Chicken

This was really good and really easy to make. I followed the receipe except I used shredded cheese and a mixture of greek yogurt and cream cheese because I did not have enough cream cheese. The chicken was moist. I would have liked the breading to brown a bit more, but I did not want the chicken to dry out. My boyfriend and I both loved it.

Fast Salmon with a Ginger Glaze

So simple yet so delicious. This glaze is restaraunt quality. I always pan sear my salmon, used evoo, sea salt, and fresh ground pepper. I sauted on both sides for about 4 minutes each. I only used 2 cloves of garlic and about 1 tablespoon of ginger (i love ginger). I was concerned it would be too hot with the chilli paste but the rice vinegar tones it down considerablly so next time I'll use the correct amount. Made with parmesan asparagus (recipe also from this site). This took approximately 35 minutes to find recipe, prepare and eat, really. So good!!

Scott Ure's Clams And Garlic

I made this last night as a main dish on top of whole wheat thin spagehetti and it was delicious. I added a squeeze of lemon juice, a sprinkle of canyenne pepper, a few shrimp, and a sprinkle of fresh parmesan and ramano blend cheese to top it all off. I could just drink the sauce it was so good. Like other reviews suggested, eat with plenty of crusty bread to sop up the sauce with and enjoy.

Blackened Salmon Fillets

I love this blackening seasoning recipe. I've had this recipe saved to my Recipe Box for awhile now, and finally tried it. This surpasses restaraunts. It is quite spicy but I love it. I've blackned tilapia, chicken, and mahi mahi with this seasoning. I used butter the first time but just brushed it with EVOO the others. Still very good with less calories and the hassel of melting butter.
