Butternut Squash and Turkey Chili

I love this recipe! I have been looking for something to use my home canned butternut squash in besides another sweet soup and this was excellent. Good flavor, very filling with the hominy and beans. The only change I made was I used black beans and drained them - otherwise, I made it as published. I served it with a little grated cheese on top.

Chicken Dumpling Strips

My husband was looking for a dumpling recipe "just like Mom used to make" and this one is the closest. It is WONDERFUL! Comfort food for both of us and easy to make.

Goat Cheese and Arugula over Penne

This had a wonderful flavor! I highly recommend using fresh ingredients, especially the arugula as it gives it a spice that keeps it from being bland. I reduced the recipe down to 4 servings so I could use a 4 oz block of goat cheese. I sliced up some link sausage and sauteed it to go with it and had dinner ready in about 20 minutes.

Cherry Pie IV

Wonderful flavor and not runny at all! I used 3 cans of tart cherries and it was the perfect blend of tart and sweet. I used the Baker's Secret pie crust, which I use for all my pies now and get rave reviews on it also.

Crunchy Corn Medley

I made this for work and everyone raved about it! I forgot the water chestnuts, but it was good without them. I used one can of LeSeur peas since I don't like frozen peas, cut the green onion down to 4 and the bell pepper to 1/2. I also cut the sugar to 1/4 cup and it was plenty sweet. I used olive oil for the vegetable oil. It was so YUMMY!

Streusel Topped Blueberry Muffins

These were wonderful!!! For once, I didn't change a thing in the recipe and they came out perfect. I made a little extra topping, but had too much so I will just make the recipe amount next time.

Lowcountry Shrimp and Cheese Grits

Really good and really fast! I did not have any fresh tomato so I omitted it. I used 2 cups of chicken broth and 1 cup 2% milk to cook the grits. I chopped up some onion and garlic and sauted in the oil before I added the shrimp and then used some cajun seasoning and smoky paprika on the shrimp. Used the cheese I had on-hand - some sharp american cheese slices and some medium cheddar which I grated up. The grits were creamy and rich with the cheese - a stick-to-your-ribs dinner!
