I think this recipes would be great as is, but since halfway through I realized I put in 1/3 cup lime juice and 1/4 cup water instead of the other way around AND I didn't have soy sauce or cayenne pepper like I thought I did I can't say for sure. What I ended up with was really good. I omitted the salt on accident, left the soy sauce out (since I had none) and substituted crushed red pepper flakes for the cayenne. It was such a light citrus taste. I didn't marinate the chicken I just cooked it in the sauce with three sliced red/ yellow/ orange bell peppers and onions and served with some lettuce on whole wheat tortillas. It was so flavorful. My husband calls them lime-itas and he only names things when he likes them. This recipe led to a great dinner and I recommend it as a starting point. Maybe next time I'll actually try it as-is!!
