Wow! I've tried several versions of veggie chili since going vegetarian, but this is by far the best! My meat eating friends and husband all loved it - this will definitely be my new go-to chili recipe. It's incredibly hearty and flavorful. My only modifications were: 1 28-oz can of crushed tomatoes (as other reviewers suggested), only 1 jalapeno since I only like a bit of spice, and no canned green peppers as I could not find them in my local store. I added a few drops of Frank's Red Hot to taste. Also, just one pack of Mexican-flavored veggie ground round was plenty. Still had a very thick chili in the end! Served with cornbread, this was the perfect Super Bowl/cold weather meal and there's plenty of extra to enjoy all week.
