High Five Orange Rolls

Reviewed: Jan. 18, 2012
These are amazing! They are so soft and just melt in your mouth. They rose beautifully in the refrigerator overnight and I haven't been able to find any other breakfast (or cinnamon) roll recipe that rises so well that way.

The Best Parmesan Chicken Bake

Reviewed: Jan. 18, 2012
Very good and easy...served it over a little pasta. You can't compare it to actual Parmesan Chicken, though. This is just a very delicious casserole dish. I do a rough crush of my croutons.

Classic Cinnamon Rolls

Reviewed: Jan. 18, 2012
Very yummy! And a recipe that I will continue to go back to. I followed the recipe, except for using 1/2 cup brown sugar with 1/2 cup granulated sugar in the the filling. Because the recipe makes so much, I experimented and placed half of my rolls in the fridge to rise overnight for the second rise. The other half of the batch I let rise right away in a warm spot, for an hour or so and then baked. The ones that were refrigerated overnight didn't rise as much as the others. I think in the future that I will just let them rise and bake the same day, rather then doing the overnight refrigerator method. They can always be warmed in the microwave and taste just as good and are larger, that way.

Mouse's Macaroni and Cheese

Reviewed: Aug. 10, 2011
I used (2) 8oz bags of the shredded Kraft Easy Melt cheese instead of the Velveeta (processed cheese) and then also added approx. 2 cups of shredded extra sharp cheddar, instead of the cubed American cheese. This was plenty of sauce for the entire box of elbow macaroni. Oh and I leave off the bread crumbs, just my family's personal preference. So very, very yummy. It has become my go-to Macaroni and Cheese recipe.

Award Winning Soft Chocolate Chip Cookies

Reviewed: Jul. 2, 2011
These are very good! I was skeptical about the pudding mix, but the cookies turned out very nice and tasted great. (pudding mix is the powder straight from the box, no prep, for those questioning it)

Simple Scones

Reviewed: Jul. 2, 2011
You don't need a food processor! It is so easy to grate frozen butter and does not take long at all. I think it would take longer to clean all the pieces of a food processor, than it would to grate the butter with a box grater and use a couple of bowls. Follow the recipe! These scones are wonderful! Flaky and yummy and the recipe is so versatile. I have made them with raisins, dried blueberries w/lemon, and dried cherries w/ almond extract. All are sooo good! In fact I think I will use the technique of grating butter for pie pastry, too.

Cinnamon Crackle Cookies

Reviewed: Feb. 4, 2011
I folllowed the recipe exactly and they turned out fantastic in taste and appearance. I too was skeptical about the citrus flavors before trying it out, as I am usually not crazy about orange flavor in foods, but these are super yummy.

Chocolate Mint Candies Cookies

Reviewed: Dec. 19, 2010
Great recipe! Used only half of mint, on each cookie and that was plenty. Used parchment paper on my cookies sheets, that way there is no need to grease the sheets, placed the mint on the cookies while on the cookie sheet and swirled the candy with the back of a baby spoon when melted. They turned out beautiful!

Great recipe! I used vanilla, only because I did not have brandy, but followed the recipe exactly and they turned out fine!!

Gingerbread Biscotti

Reviewed: Dec. 19, 2010
Wonderful recipe as written and does not need any modifications. I did bake them a little bit longer on the second bake, as I wanted them a little bit more firmer then they were. I also dipped some of them in a little white chocolate. It helps to dampen your hands in cool water when shaping the logs on the cookie sheet, that way they are not as sticky.

Cranberry Pistachio Biscotti

Reviewed: Dec. 19, 2010
This is a fantastic recipe as written and does not need any modifications. My biscotti turned out perfectly. I did not add the salt, only because I used salted pistachios, and I did crush the pistachios into smaller pieces.

Baked Apricot Chicken

Reviewed: Aug. 12, 2010
Wasn't sure if I would like this combination of ingredients, but it is really good! And so simple and quick to throw together! Really good served with rice and a side of steamed brocolli.

Black Bean and Rice Enchiladas

Really, really good. I followed the recipe exactly; I just used picante sauce for the topping, too, rather than purchase a jar of salsa. I will make again and again!

Blueberry Cream Muffins

Reviewed: Aug. 12, 2010
These are good, but not my favorite. I didn't think there was anything special about them...just a basic blueberry muffin; which actually is not a bad thing, I was just expecting more, because of all the outstanding reviews. I think I prefer the Jordan Marsh Style Blueberry muffins on this site.

Streusel Topped Blueberry Muffins

Reviewed: Aug. 12, 2010
These are good. Not real pretty and kind of messy with the steusel. Not sure if I like the streusel topping, but that is just a preference of mine.

Basic Flaky Pie Crust

Reviewed: Aug. 12, 2010
Followed the recipe exactly and my pie turned out wonderful. I did a two crust pie, with the top being lattice and did not have to double the recipe, but I would double it if making full top crust, just to be sure. Nice to work with and the results were nice and flaky. Will always use this in the future.

Banana Oatmeal Cookie

Reviewed: Aug. 12, 2010
Love these. They are a nice change from banana bread, as you can just grab and go, rather than slice. They do have the texture of a muffin, so I would agree that they are a 'muffin top'...soft and moist and they do stick together a bit, just as bread or muffins would. They oatmeal also gives a nice texture, with more substance.

Grandma's Blueberry Pie

Reviewed: Aug. 12, 2010
This is a fantastic recipe as written. I used fresh blueberries with maybe 1/4 extra than the recipe calls for. I think tapioca works much better than flour or cornstarch, as my experience with those is that they cloud up the filling and it doesn't make for such a pretty fresh looking pie. For the pastry I used Basic Flaky Pie Crust from this site; also very good.
