Baked Pork Chops I
This recipe is absolutely fantastic. Normally I don't like reading and/or writing reviews when substitutions are made before trying the actual recipe as written, but for this one it doesn't matter. Made the first time as written, and the pork chops were the moistness and most tender pork chops I have ever had bake. The next time I made it we had company that did not want anything with alcohol in it, so I substituted 1/3 cup apple juice (with 1 teaspoon vinegar mixed in) for the wine, and I thought this tasted even better. The next time I made it I substituted 1/3 white grape juice (with 1 teaspoon vinegar mixed in) for the wine, and it was still great. When I make this, there is no need to get out any knives, a fork is all you need. Cleanup is a little messy though.

Chicken Florentine Casserole
Absolutely one of the best recipes I have found for chicken breasts. My wife and stepson are very picky eaters, but they both loved this recipe and ask for it over and over again. This recipe is also very easy to make.

Decadent Peanut Butter Pie
This is my most requested dessert to bring for Christmas Dinner and disappears very fast. Instead of the prepared "Chocolate" pie crust I use the prepared "Oreo" Pie Crust. I think it gives it a better flavor, and the color blends well with the Hot Fudge.
