Dave's BBQ Sauce

This was amazing! I thought it would be too ketchupy, but it was fantastic, and got better the longer it sat. I used smoked salt in place of the soy sauce and microplaned in the onion (I eyeballed it) and one clove of garlic for 1/4 of the recipe. I didn't have fresh lemons so I used lemon juice. Thanks so much, Dave!!

Zucchini Cheddar Pancakes

Phenomenal! My 11 month old couldn't get enough of these delicious "pancakes." I was in a hurry so I didn't measure exactly...a little more zucchini, a little less cheese, no onion so I just threw in some garlic powder. I used 1 serving of "Biscuit Baking Mix" recipe from this site instead of 1 cup of Bisquick, subbing olive oil for the shortening. Next time I'll probably use sharper cheese, more garlic, or actually use the onion. Thanks, Tricia!

Whole Wheat Zucchini Bread

I used 1/3 of the recipe and it made 12 just-right muffins. They only took about 20-25 minutes. I was out of AP flour, so I used half whole wheat flour and half bread flour. I also added a pinch of nutmeg. They were fantastic! I ate them for breakfast all week long.

Summertime Sweet Pickles

This was my first time making pickles, and they were fantastic! Crunchy, sweet, good bread & butter flavor. I think next time I'll leave out the onions (it was just a little too tangy for me). Thanks, Liz!

Farmhouse Chicken Dinner

I debated between a 3 and a 4. I think this recipe has a lot of potential. Cooking with the dressing was interesting (although you can't really taste the dressing), as was the "quick roasting," which is essentially what happened in the skillet while it simmered. And, while my husband and I liked the creaminess of the sauce, we both agreed that it needed a lot more flavor. If I make this again, I'll probably leave out the veggies (and serve a fresh salad on the side), and either simmer down the cooking liquid to use as a sauce (in the hopes of keeping the tang of the dressing) or, if I do add the cream cheese at the end, also add some dijon mustard or something else to give it some flavor.

Mandarin Vegetable Medley

I followed SunnyByrd's suggestions and used half sesame oil, half olive oil, and I added some red pepper flake. The dressing was a bit too strong - maybe just less of it next time? Less lemon? Blanching the asparagus after simmering in chicken broth really made it stand out. I'll make it again, but with less dressing.

Red Potato, Asparagus, and Artichoke Salad

I liked the combination of asparagus and red potatoes, but I thought the dressing did not suit well. The lemon was quite strong, but the oil flavor somehow came off strong as well - and I didn't even add all of the dressing! I added some honey to try to tone it down but it didn't work so well. I gave it a three because I think, with some tweaking, it could be a good salad.
