When I was 10 years old and tried to make cookies from a mix - I used twice the wet ingredients than dry in the box - it was sad!

Indian Eggplant - Bhurtha
Prepared this dish the day before serving - waited to add fresh ginger until the day of serving at reheat ingredient changes: added Zucchini; couldn't find cumin seeds or cilantro, so didn't use them. Preparation changes - eggplant removed the skin on 2 medium eggplants and cut it into 1 inch rings, sprinkled with some salt and let it sit for at least 30 min (to remove the excess water). cubed the eggplant drizzled it with olive oil and put it in the oven and let it bake for approximately 15 min. Meanwhile I cooked the onions, cubed zucchini (1) and other spices listed; then followed the rest of the recipe.

Strawberry Fields
Love this salad, very easy to adjust for tastes, but uniformly people tell me they love the fresh strawberries.

Cheese and Broccoli Chicken Soup
I really liked the soup, my kids liked it more than I do. I used turkey instead of chicken and browned that in butter with 3 chopped cloves of garlic. I cooked the broccoli in 4 cups of chicken broth (only needed enough for 4 people). Added the turkey to the stock and then made the roux adding it slowly, as suggested, to the stock. Finally added LOTS of mild cheddar. It was great! Thanks for the recipe.
