Garlic Mashed Cauliflower

YUM!!! Let's be honest, there's nothing better than mashed potatoes, but when you're trying to cut calories and prepare a more healthy meal/side dish...MAKE THIS RECIPE!! Cauliflower is good, but it's not my most fav veggie...however I am now team cauliflower! The final dish is so flavorful and creamy! My family does like garlic (a lot) so I did use a few more garlic cloves than the recipe called for. And my food processor is on the smaller side, so I blended in batches & then mixed the batches together to combine. All in all this WILL be added to future meal planning!!

BBQ Chicken Pizza from Pillsbury® Artisan Pizza Crust

Holy Wow!!! This is a delicious homemade pizza! (kind of a double edged sword, so good...but now I'm gonna crave more!) I couldn't find the artisan dough recipe calls for, so I just used the Pillsbury classic pizza dough. Also, before pre-baking it, I sprinkled some garlic powder on the dough, for a little flavor. Before putting the toppings on the baked dough, I took the advice of a fellow baker and brushed with some BBQ sauce, then added the cheese, chicken and onions. Also, I sauteed onion slices for added flavor and then used a small amount of raw onion. After baking, added the diced cilantro, really brightens the pizza! Seriously a delicious pizza!!!! Excited to try various toppings - but this may be a repeat favorite.

Baked Garlic Parmesan Chicken

This recipe is so yummy! I took the advice of another user & put the oil and garlic into a zip lock bag and coated 1 chicken breast at a time. I also roasted the garlic prior to adding it to the oil. The chicken comes out so flavorful & tender! I think the next time I make this, I'll put the chicken on a rack inside the pan, to raise it up & allow the bottom to become crisp, too. I paired the chicken with roasted veggies & my man loved it! Another allrecipes success!

Spinach and Orzo Salad

This is a simple, delicious and refreshing salad! Perfect for pot lucks and large groups, makes plenty to go around! I did find that pine nuts were either hard to find or expensive when I did find them, so I substituted sunflower seeds! Perfect addition. Adds a nice salty crunch. Will be making this again...and again...

Donut Muffins

Yum!!! I'm more of a visual learner, so the video really helped me see how to dip/roll the baked little muffins. I am not the biggest fan of nutmeg and the first time I made them, that spice was a little strong for me, so on the 2nd batch I used only 1/4 nutmeg and 2/4 cinnamon...much better, for me!!! These are perfect little munchies and so easy, quick and simple to make! Will make these again...and quite often!

Balsamic Roasted Pork Loin

This was a simple and delicious way to prepare pork. Our pork loin was just under 4lbs, so it took a bit longer than the recipe states to cook. It also mentions a temp of 145, but when I pulled the pork out at that meat temp, it was still a bit pink. At about 165/170 degree was perfect for us. Meat was still very tender and juicy. The marinade was so flavorful and really added an extra "zing" to the pork. We marinated it for just about 3 hours, I'm sure it only gets better the longer it sits. Paired it with some roasted asparagus, was a wonderful dinner!

Spinach-and-Mushroom-Stuffed Pork Chops

DELICIOUS!! The only "con" to this and it was my own fault, I didn't go to the butcher for a thicker cut pork chop, just purchased the "ready to go" ones prepackaged in the meat dept. A thinner chop makes it a little difficult to slice open and really stuff, but it all worked out in the end for me. I only cooked 3 chops, but followed the recipe as instructed, so once I placed the chops into the pan to bake, I topped them with the leftover stuffing. I also forgot to add the cherries into the stuffing (dang it), will have to remember to put those in next time - there will be a next time! Meat comes out very tender, moist and flavorful. Highly recommend this recipe!

World's Best Lasagna

It's been years since I've made lasagna - this recipe does take a little work, but TOTALLY worth it! I did use a combo of ground turkey & Italian sausage, also substituted fresh basil for the parsley. Rave reviews on the finished product, this recipe will certainly be saved & put into rotation!

Grilled Salmon I

This has to be one of my favorite ways to marinate salmon! The pairing of soy sauce with brown sugar gives the fish an added sweet and savory flavor. Salmon comes out so tender and flaky. I average marinating time for at least 2 hours, but have had it sit for up to 4 before grilling. I have done grilling directly on grate, but I prefer to use a large sheet of foil, sprayed with Pam, and place the foil directly on the grill, less chance of losing any delicious meat to the coals.

Baked Chicken and Zucchini

YUM!!!! I read a few of the other reviews before making this and I did follow a piece of advice that was shared. I only briefly sauteed the zucchini before putting it into the casserole pan. This dish is SO GOOD and the chicken comes out so tender and juicy. I love the flavors of the zucchini, tomato & basil together. I did use panko bread crumbs to add a little more crunch to the chicken. I invited my parents over for dinner & made this dish!! Everyone raved! I will certainly be making this again...and again...etc!!!

Chicken Tortilla Soup V

This is such an easy & DELICIOUS soup to make! I added 1 cup of frozen sliced carrots and diced a few canned jalapenos to add as well. I have made this soup countless times & never disappoints!

Cherry Tomato Corn Salad

This is a very refreshing summer salad. Great as a side to bbq chicken/ribs! When I went to the store, they were out of basil, so I used cilantro. I also added roughly chopped orange bell pepper to add more color and crunch. Instead of sugar, I did substitute 1/2 teaspoon of agave nectar. ENJOY!!!

Lemon Shortbread Cookies

These are delicious! I did use real lemon juice vs. extract. They are buttery, rich and with the lemon juice & zest really have a extra special fresh taste to them! I just finished a batch to send to a friend for his birthday, but have decided I need to make some for home! Enjoy!!

Corned Beef and Cabbage II

This was the first time I've made Corned Beef & Cabbage...it turned out so good and so tender!!! I did boil the meat on the stove top and added 2 bottles of O'Douls non-alcoholic beer to the water, to give a little extra flavor! I will be making this dish again! I think I may have to make this more than just once a year.

Easy Lemon Cookies

This was the first lemon cookie recipe that I have made. It will not let you know! These cookies are now my family's and co-worker's favorite!! I did take the advice of another baker and used 1 Tbsp of fresh lemon juice vs. lemon extract, it really added flavor and freshness to the cookies. I will be using this recipe quite often!
