Strawberry Cake I

Made this for a co-worker's birthday and it was awesome! Sweet but not too sweet. Next time I think I'll try it with fresh strawberries instead of frozen.

Banana Crumb Muffins

I've made these twice, both without the crumb topping because I was missing cinnamon. These muffins are AMAZING. The first time I made it the bananas were overripe, and the second time they were fresh from the store. The muffins are moister and taste better with the older bananas. Either way though, they're awesome. Will try again when I remember to pick up some more brown sugar!

Chicken and Pasta Casserole with Mixed Vegetables

I recently made this and it was very good! Not amazing, but definitely tasty and not hard to make. I made the following substitutions: 2 cans cream of chicken instead of one mushroom and one chicken, 2 cups pasta instead of one, 1 cup mixed veggies instead of two, and I didn't make the topping of cheese/butter/breadcrumbs. The casserole was not too soupy. It was definitely moist though! Without the topping a few of the noodles on top got a little tough but the rest was good. I cooked it in a 9x9 dish. If you make the recipe as stated it's too small for a 9x13.

Gaye's Microwave Fudge

Decent recipe. I made one batch exactly the way the recipe stated. It tasted okay, but the fudge was hard to cut, a little lumpy, and crumbly. I made the second batch with the suggestions of others. I sifted the flour and cocoa together in one bowl, and melted the milk and butter together in another. I then poured the milk/butter and vanilla into the bowl with the dry ingredients and mixed. This fudge came out much creamier than the first batch. The only complaint I have is that the fudge does not come out very thick. I used an 8x8 pan and the fudge wasn't even 1/2" high. The batter was also very hard to pour and spread - I suspect the recipe needs some more liquid ingredients. The fudge is good, but it defintely doesn't taste like real chocolate fudge. Good for just a sweet bite though!

Chicken Fried Chicken

Absolutely delicious. My husband is extremely picky and even he liked it! The batter is very light, but still crispy, and the chicken stays very moist! I don't think I cooked the pieces for 15-20 minutes like the recipe says, but I used smaller pieces of chicken.
