Coconut Cream Dessert

Spinach Greens

used 1/2 the amount of bacon and 1/2 the amount of salt and it was just perfect. Plus I added a sprinkle of crushed red pepper for some kick, which I thought helped counteract the sugar you add. I will make this again.

Strawberries with Balsamic Vinegar

I served this alongside edy's light vanilla bean ice cream. It is delicious. A couple friends I served it to, who normally do not like vinegar, said it was delicious. No one could believe it had black pepper in it. Just make sure you let the strawberries macerate for at least 1 hour so the flavors come together. Will be a "healthy" dessert favorite to serve to company for a long time coming.

Orzo and Wild Rice Salad

very yummy colorful salad. Changed a few things. I added cucumber, carrot, and fresh spinach. I just used the red pepper and not the green and yellow. I also had regular dark balsamic vinegar so this is what I used. I also used basil infused evoo. I cooked the wild rice in 1/2 chicken broth, 1/2 water for added flavor. Make sure you use the currants (or some type of dried fruit) This makes this salad stand out with a pop of sweetness. added toasted pine nuts because I had some on hand. I also added some crumbled goat cheese right before serving. Everyone raved at how good and pretty this salad was.

Tortilla Ham Pinwheels

These are good written the way the recipe is, but they are great if you add a little texture and color. I added a little fresh baby spinach leaves and chopped roasted red peppers. Then it became a 5 star recipe.

awesome! the nuts and chocolate chips are NOT optional in this recipe. It is what makes it so good. Cream cheese frosting would have ruined them.

Easy Toffee Bars

I am writing this 3 reviews based on how the recipe is written. I wish I would have read reviews better before making this so I could have applied others tips. Like how to spoon the brown sugar sauce over the top instead of pouring and how to melt choc chips first. These tasted good but did not look like the picture at all. The chocolate chips were still in whole form and when I tried to spread them out after warm it just looked like a mess. Mine did not turn out as "bars" but more as a snack mix.

Slow-Cooked German Short Ribs

I liked the sauce on the finished product but my husband didn't care for it. I wouldn't make again. I just have not had succes with how fatty short ribs are. It seems like they are mostly fat and not enough meat.

Greek Green Beans

I loved this! the only changes I made were to use a 16 oz can of stewed tomatoes with juices that I chopped. (good fresh tomatoes were not in season) I also added a little chicken stock to add a little more moisture since it had to cook for so long.

Glazed Fruit Bowl

This was a nice variation on a plain fruit salad. Use fresh blueberries in this salad like the recipe states. I used frozen and it was a mistake because it turned the whole salad blueish in color.

Company Cheesecake

Very good creamy cheesecake. The only reason why I gave it 4 stars was because I preferred a graham cracker crust over ths one. The egg seamed like an odd addition to the crust. If I made this crust again I would try without the egg in the crust.

This was really good. The only changes I made were to use boneless skinless chicken thighs and goat cheese instead of fontina. I had the goat cheese on hand so I decided to use that instead. I served this along with some fresh green beans for dinner.

Peanut Butter and Banana Dog Biscuits

my dog loved them. I also gave them as gifts to a couple friends. The only thing I substituted was oatmeal instead of wheat germ. warning: when they are baking they smell like people cookies. :)

Browned Brussels Sprouts with Orange and Walnuts

I liked this one very much. I roasted in in the oven at 350 for about 30 minutes on a cookie sheet instead of cooking in a skillet. I added the walnuts during the last 10 minutes. I added more oil than it called for. I used walnut oil but it was a little expensive. You could probably substitute olive oil or vegatable oil and it would be fine.

Apple Brine for Turkey the Night Before Cooking

Most moist turkey ever! Nice mild flavor. Not too salty, but I did not add any salt to the turkey before cooking. Used an oven bag for an 18 lb turkey. Cooked at 350. Was finished in 2 hours.
