Cheesy Acorn Squash

Since I prefer savory food to sweet, I have been making different variations (depending on the last visit to the grocery store!)of this for years - it is one of my hubby's favorites. We like to add either bacon or sausage to the fried veggies. We use some of the grease from the meat to fry the onions & mushrooms in. Haven't tried it with celery, but I like the idea. I also like to mix some cheese in with the stuffing mixture, so you get some cheese in every bite (can never have too much cheese at our house!) We also add a little seasoning, garlic, seasoning salt, that type of thing. This recipe sounds like it would make WAY too much stuffing for the squash though. But, it is the best part for sure!

Mommy's Surprise

This was a very good starter idea. I seasoned the beef as I browned it with garlic, seasoned salt and some Montreal Steak Seasoning. I skipped the green pepper, because I don't like it and used fresh mushrooms. I also used the regular Grands biscuits (not the flaky layers) that I had on hand. I cooked them up and hollowed them out. Whatever we didn't eat at supper, I rewarmed for leftovers for myself the next day. They got a little soggy, but they were so good it was worth it! I love cheese, but didn't use quite the whole 2 cups. This will definitely be made again at my house!!

Dad's Kickin' Jamaican Wings, Mon

These were not as "kickin" as I hoped they would be. Marinaded them overnight in the pasty marinade, but they were still very bland. They smelled great cooking and the little bit of flavor they did have was very good. I don't know how to rescue these. Maybe some vinegar in the marinade to help it penetrate?

Italian Pork Tenderloin

I know it changes the point of the dish, but I did not use the sun dried tomatoes or fresh herbs. Instead I used poultry seasoning. I also prefer mushrooms to onions in this dish and seasoned the pork with a little seasoning salt while it browns. But, it is SO good. I have made this several times and we always eat every bite!

Garlic Pork Roast

This was AWESOME! Only used 1 clove of garlic and mixed some yams with the sweet potatoes. Probably won't do that next time as they were overdone and seemed like a sponge for the grease. Thought this was excellent.

Restaurant-Style Tequila Lime Chicken

Thought this was "ok". Marinated the chicken overnight. Fried on the stove in olive oil/butter, then added salsa and taco seasoning to the mayo/sour cream, topped with cheese and broiled. Won't make my top 20 list, but it was decent.

Baked Brie with Mushrooms and Almonds

This was delicious! I used Canola Harvest, fresh mushrooms and a clove of garlic and it was a HUGE hit. Served with Triscuits to keep to our South Beach Diet. Did need to bake about 15 minutes longer to completely melt the Brie, but worth the wait! Everyone wanted the recipe!!

Layered Crab Spread

Instead of chili sauce (which is really just spicy ketchup) I used cocktail sauce. I also prefer the "tamer" taste of imitation crab. This is always a hit.

Layered Chicken and Black Bean Enchilada Casserole

Spicy Peach Chicken

YUMMY!! We cooked this on the grill and used Lawry's Perfect Blend Chicken Rub instead of Creole Seasoning, but it was REALLY good. No leftovers. Even my super picky son liked it. Thanks Melissa!!

Micky's Sticky Licky Sweet n Zesty BBQ Sauce

I was pretty unimpressed. Not at all zesty, even though I added Franks Red Hot and some Hickory Seasoning (Liquid Smoke). Tasted a lot like my moms homemade sloppy joes. Bland enough that kids might like, except its chunky, which turns mine right off. I won't use this recipe again. Sorry Micky!!

French Baguettes

Too sticky. Needed to use 3 cups of flour. BUT, then this makes the BEST French bread ever. I do not roll out, just shape and bake. YUMMY!!

Guinness® Corned Beef

I thought this was going to be great - and was SO disappointed. It was tough and stringy and the beer flavor was a nasty unwelcome addition. I made the vegetables in broth on top of the stove and it was a good thing - it's all we ate of the meal. 2 thumbs down for this recipe. I will stick with the tried and true stovetop method from now on.
