Soft Sugar Cookies V

Reviewed: Dec. 15, 2010
This is an excellent sugar cookie recipe that I have been using over a year. I figured it was time to write my own review after reading some of the recent surprising negative reviews. My kids always request this cookie for their holiday party snacks at school. There is definitely not too much flour in this recipe. If you were to use any less you would be left with a gooey mess that wouldn't be able to be rolled out. I have made this recipe so many times and never once did I have a batch where the dough turned out crumbly. The directions say to use softened butter and I place the butter in the microwave for 30 seconds to basically have it melted before starting on the recipe (maybe others don't have their butter softened enough to begin with). Next, I add all the ingredients but the flour, baking soda, baking powder, salt and nutmeg and cream them. Then I add half the flour (2 cups) and mix again. After that is well blended I add the remaining 2 cups of flour with the other dry ingredients and mix. Personally, I like the nutmeg in these cookies and don't find it to be too much at all and find it hardly noticeable. Also, I saw someone mention these don't brown up on top. I have never wanted my sugar cookies to brown up on top and have been known to take them out a little early to make sure they don't. I use the Sugar Cookie Icing recipe from this site by JBS Box and it works excellently with these cookies. I highly recommend this recipe!

Party Pinwheels

Reviewed: Oct. 4, 2009
Delicious! I omitted the olives just because I don't like them. I used all the ranch packet and didn't find them too salty at all. But by omitting the olives that could have cut down on the saltiness that others have mentioned. I used 5 tortillas instead of 4 and feel like I could have even used 6. Instead of sprinkling on the celery, red peppers and cheddar cheese onto the cream cheese mixture I combined all ingredients and then spread it onto the tortillas. I made sure the tortillas were room temp or slightly warmed in the microwave before spreading the mixture on to avoid the tortillas cracking when rolling. Excellent recipe, thanks for sharing!

Broccoli Cheese Soup

Excellent soup! Did double the cheese and broccoli after reading other reviews. Decided to use flour instead of cornstarch to thicken. Also pureed the soup. Thanks for sharing!

Best Cream Of Broccoli Soup

Reviewed: Jun. 18, 2011
Even my kids enjoy this soup recipe! Thank you so much for sharing. I had quite a bit of broccoli in the fridge that wasn't going to get eaten so I searched for a soup recipe. I am so very happy I found this one, and this will always be my go to broccoli soup recipe. I do add some Velveeta cheese and after combining all ingredients I add a couple more tablespoons of flour to thicken up a bit more.

Baked Spaghetti

Reviewed: Apr. 16, 2012
Absolutely delicious! Only thing I added was some fennel seed and some Italian seasonings to the spaghetti sauce/beef mixture. My kids helped me make it. My oldest said it was her new favorite meal and my picky eater enjoyed it as well. My husband said it was a definite comfort food and had a hard time stopping. This will be my go to dish to take to people when they need a meal. Thanks so much for sharing. This is definitely a keeper.

Excellent! I added tomato paste (probably 4-5 ozs) because I had a can open.

Quick and Almost-Professional Buttercream Icing

Reviewed: May 31, 2012
Terrific! Will never use canned again. This is easy and delicious. I did use salted butter because it is all I had in the house. It still tasted great. I creamed the butter and then added the powdered sugar and vanilla. I used a bit extra vanilla. Then after everything was mixed I added milk to get it to the consistency I wanted. Ended up using very little milk. I doubled the recipe and only used 1 tablespoon. Partly because of the extra vanilla I am sure and I wanted it a little stiffer. The recipe doubled allowed me to frost my 9 x 13 cake and have extra to pipe with. This frosting was excellent for piping! Definitely recommend. Thank you for sharing.

Sweet Dinner Rolls

Okay, I love to cook and bake. My husband and I joke about me not being able to make bread. I cannot toast it, make it in a bread machine or anything. I usually fail at bread. This recipe was AMAZING. For once, I am not a failure in the bread area anymore. Thank you so much for this recipe.
