Slow Cooker Pulled Pork

So many of these reviews just raved about this recipe and yet there were a few that complained about the "root beer" taste in the meat. I was convinced those few were just crazy... well, they were right! (Hear me out!) When you take the roast out to drain the root beer and pull the meat, you can most definitely taste the root beer. However, if you follow the directions and suggestions from others, put the meat back in the crockpot mixed with the BBQ sauce for an hour or so. After that you will not taste the root beer. You get a very tender and flavorful pork sandwich. Do not use tenderloin, a waste of good meat. I used a 4.5 lb pork roast on sale (the one with a bone) and a bottle of good ole K-C Masterpiece sauce. With some toasted buns and pinto beans, you got yourself a down home meal. Thanks, we really loved it!

One Pot Pinto Beans

Very good! I followed the cooking directions exactly except I used a yellow onion and did not add the pico or cheese. I'll make this again and probably adjust the seasoning more to my tastes. Thanks!

Easy OREO Truffles

I was all fired up and ready to just slam this recipe since the dipping part initially was a big pain in the a**!!! However, I stopped and read several reviews and calmed down. First - these are some of the tastiest morsels you will ever eat, but I had trouble with melting and then coating with white chocolate. The balls were chilled, but I just couldn't get the stuff to coat and I ended up with a big blob of chocolate. I was using a double boiler also! I transferred the blob to a small dip size crock pot and I added about a tablespoon of shortening; and then it just worked. I gave up on the skewers and just used a slotted spoon and another spoon to coat. I may try again with the stick since I really wanted a pop presentation. But the balls are in the fridge now and have hardened beautifully. Still not as pretty as the pictures, but I topped with colored sprinkles and they look great. I think I will try the melting chocolate from craft stores as others had suggested, but I was determined to use what I had on hand. I can honestly say, I will make this again, but I'm much wiser now!

Easy Toffee Bars

I've made these with semi-sweet and milk chocolate chips. I've used chopped macadamia nuts, almonds & pecans. I've used graham crackers, saltines and the long narrow buttery crackers. Just make sure the butter/sugar mixture boils for 4 minutes before removing from heat. I line my jelly roll pan with parchment paper. Also - you do not need to place the pan back into the oven after the chocolate chips. The heat from the sugar melts them. Just let the chips soften for a minute then spread evenly before sprinkling the nuts. This is probably the reason some of the negative complaints have mentioned burnt chocolate. So easy and so addictive!

This recipe is also called "Toffee Bark" You can change the crackers, nuts and type of chocolate. I have made these by using graham crackers, semi-sweet chocolate chips and chopped macadamia nuts! Just follow the directions exactly as printed. You will not be sorry, unless you only make one batch!

Brunch Enchiladas

Added several cans of chopped green chiles and more green onions to the ham mixture. But otherwise, followed the recipe. Baking time took more like an hour though, could have been our location. We live in Denver. Everyone enjoyed it and it reheated nicely in the microwave for lunch the next day.

Monkey Bread Muffins

I liked these! I thought I had Apple Pie spice, but it was Pumpkin Pie and it till tasted great. I used Grands Buttermilk and gut the pieces a little smaller than called for. I also drizzled a little of the sauce over the hot muffins right after taking them out of the oven.

Slow Cooker Beef Stroganoff I

I wanted to try this recipe but had everything on hand except beef. So I used cut up chicken breasts instead. It worked great, actually. I followed other suggestions and used onion soup mix but I also threw in a packet of beefy mushroom soup. Then I did add about a 1/4 cup of sour cream with the cream cheese. Loved this recipe! Can't wait to try this with beef. I will probably add some garlic powder next time.

Mrs. Sigg's Fresh Pumpkin Pie

WOW! My first attempt at fresh pumpkin pie and I must admit you can tell the difference. I followed this recipe exactly, except I increased the pumpkin pie spice to about 3 tsp. I purchased my sugar pumpkins around Halloween and baked and pureed and then froze the puree until this week. I used my big turkey roaster for the baking part and was able to cook 4 pumpkins at the same time. Just add some water to the bottom of the roaster. I noticed there were lumps and strings in my mixture, so I just strained it all before pouring in the crust. Everyone said they could tell the difference and have asked me to only make the pies this way in the future. Very impressed with this recipe.

Fluff Dip for Fruit

Did not have liqueur and but it did not matter. I just added a few teaspoons of vanilla extract. Served with pineapple, watermelon, cantaloupe, honeydew, strawberries, kiwi and mango! The fresh mango was the best with the dip!

Scott Hibb's Amazing Whisky Grilled Baby Back Ribs

I'm rating the cooking technique only since I have a dry rub and barbecue sauce already. These turned out perfectly! I highly recommend this cooking method! The ribs were tender but stayed on the bone for easy grilling. I brushed on the sauce, flipped the racks a few times to get the grill marks and they were done! YUM! Thanks Scott! This is the only way I'll cook babyback ribs again!

Slow Cooker Ham

Very easy and results turned out great! I used a 9lb spiral cut. I just eyeballed the brown sugar (plus I sprinkled ground cloves) in the bottom of the crock, so probably about a cup of brown sugar, total. I placed the ham cut side down then rubbed about the same amount of brown sugar and sprinkled ground cloves on outside of the ham. I cooked it on low for about 6 1/2 hours. Was not over cooked at all, very juicy and flavorful. I will never cook a ham in the oven again. Next time, I'll use the seasoning packet included in the ham. Highly recommended!

Lemon Snowballs

Followed recipe exactly and they turned out perfect! Could be one of my new favorite holiday cookies! I may even add more lemon next time; however, they are great as written. Make sure you wait the 5 minutes to roll in the powdered sugar.

Pistachio Cake IV

I love this cake, a friend used to make it many years ago. But I live in Denver and the two times I've attempted it fell in the center. Does anyone have high altitude suggestions? This doesn't happen when I make a cake mix with no additions. Only when the mix is altered. Thanks!

Fudge

I tried this first as written and really liked the results. Tried a second time with milk choc. chips and went crazy over it. I lined the 8x8 pan with foil, then sprayed with Pam. I also melted the chips in a double boiler instead of the microwave. Chilled before cutting. Came out perfectly! This has to be the best and easiest fudge. Thanks!

Apple Pie

We've been making this stuff for years. We follow the same ingredients except we only use 1 cup of sugar and it is always sweet enough for us. I recommend experimenting with the lesser amount and adding more as needed. Also, once we strain the mixture and divide into the separate bottles, we add a few extra cinnamon sticks to the final product. The extra sticks really boost the cinnamon flavor as it blends over time, plus it looks nice when giving as gifts. This is a standard for the holidays around our house and for all festive gatherings. It honestly tastes like you are drinking apple pie.

Roasted New Red Potatoes

Yum. I added a little Italian seasoning to a Ziploc bag with the potatoes, olive oil, salt/pepper and tossed to coat, then cooked in a baking dish sprayed with Pam. Cooked perfectly and tasted great!
