Playgroup Granola Bars

These granola bars are awesome! I sought out a granola bar recipe because I was spending a small fortune on store bought bars that I didn't even like that much and who knows what was really in them! I made the recipe to the T the first time but I've made a few changes along the way. I reduce the sugar and salt by 1/3, substitute canola for vegetable oil, use wheat flour instead of white and substitute half the wheat germ with whole flax seed. But every time I make these I try a new ingredient. My favorite has been the addition of 1/4 cup of chopped banana chips and 1/4 cup of nutella! The nutella makes them a little moister with a hint of chocolate. I just pulse whole banana chips in the food processor. I've been meaning to try white chocolate peanut butter as well. It's so easy to adjust this recipe. Thanks for sharing!

Sesame Pasta Chicken Salad

This pasta salad is amazing! I was very pleasantly surprised with the flavor! I'll definitely be making this again. The only thing I changed was that I added frozen and steamed broccoli that I had on hand. Next time I might also add some frozen peas or carrots or something. This is a good meal to bring to work for lunch so I like to have some veggies with it for a more complete meal.

Cucumber Sandwiches III

This is so simple but SO good. I made this on the fly when we had some company so it wasn't able to sit but it was still awesome! Of course the next day it was even better! With the left overs, I made more of a veggie sandwich with cucumbers and tomatoes from my garden with a little red onion - so yummy! The spread is very versatile.

Microwave Popcorn

I've been regularly using this recipe for a while now. Popcorn has been my fave snack since I was a kid so I was so excited to find a cheap and natural recipe. I usually use evoo while popping and season afterward - either savory (with dry ranch or a salt/pepper/garlic powder combo) or sweet (topped with cinnamon & sugar). Love it!

Taco Pie

This was super easy to make and it came out so good! I followed some others' suggestions and added Rotel to the meat. I also substituted with ground turkey and it was wonderful. My husband couldn't even tell it wasn't beef. Next time I might try adding beans too. Very yummy!

Addictive Sweet Potato Burritos

I was really excited when I found this recipe because I had plans to make a batch and freeze them for lunch at work. I wasn't expecting my husband to even try one because they don't have meat. But to my surprise, he loved them too and ate most of them before I had a chance to bring them to work. I guess that means they were a hit!

Spinach Quiche

This came out really good! I'll definitely make it again. I used fresh mushrooms rather than canned; I just added them in the beginning with the onions and garlic so they could cook down some. I should've listened to the reviews about the measurements being off. I went ahead and followed the recipe but when I poured the egg mixture, there was no way it was going to fit in a 9" pan. I probably only used half of the egg/milk mixture. Next time, I'll use 3/4 the spinach mushroom filling and only use 3 eggs and 3/4 cup of milk.

Brazilian White Rice

I have made this recipe several times and I love it! It's so flavorful and I always get compliments on this rice. My only variation to the recipe is rather than mince the garlic and onions, I do a really fine chop. Its so easy to burn minced garlic!

Flatlander Chili

I may be a chili novice, as I had never cooked it before, but this was a HIT! I served for a football gathering/party to a bunch of chili-loving men and they said it was the best they've ever had! This recipe is super easy and low maintenance. A+
