I am a teacher, wife, and Mother to 5 wonderful kids~ 1 boy & 4 girls. I work full time so I often look for quick easy recipes that everyone will enjoy! With 4 of my children being 5 and under finding time to make nutritious meals is challenging. I am new to cooking because due to our schedules we used to eat out a lot but, that is to expensive now with 5 children.
My favorite things to cook
I love baking, as well as cooking traditional Polish and Italian foods.
My favorite family cooking traditions
Chrustiki a traditional Polish cookie, and holiday desserts are my favorite.
My cooking triumphs
Deserts are my specialty I am a much better baker than cook but, am working on my cooking skills.

I once burned jello~ thought that was impossible but I did it

Ground Beef Enchiladas
These were awesome my 5 kids and my husband loved them! They were easy to make and nice and cheesy! I am always looking for fast and make ahead recipies since I need to get dinner on the table for a hungry brood after work! The only changes I made were to lighten it up a bit: 93% lean ground beef, reduced fat cream of chicken soup, lowfat daisy brand sour cream, and reduced fat mexican style shredded cheese!

Ramen Coleslaw
This was fantastic! I made a few changes~ I used broccoli slaw, rice vinegar, and used sunflower seeds instead because that's what I had on hand. All of my kids LOVED it even my son who typically HATES veggies! I will definetly make this again! It is a nice cold crunchy side to grilled meat in the hot summer weather!

Pot Stickers (Chinese Dumplings)
This recipe was awesome! I only made a 1/2 of a batch! I used ultralean ground beef, added a little more cabbage, and one tablespoon of fish sauce! They were awesome! Even my kids who are picky eaters when it comes to non-traditional food LOVED them! My skinny little guy ate 10! They are definetly worth the work and a nice alternative to pork!
