Absolutely The Best Shrimp Scampi

Reviewed: Jan. 10, 2007
Awesome! Only change I did was use 1/2 a small onion b/c I had no shallots. Cooking this is fun and the results are amazing. This recipe doesn't recreate a sauce...so if you want one prepare a butter sauce. I served with angel hair pasta...buttered with parm cheese.

Eggplant Parmesan II

Reviewed: Feb. 12, 2009
I scaled this recipe to 3 servings which got me down to one eggplant. I cooked the eggplant in a 400 degree oven for 7 minutes per side. I did the eggplant the night before and just stored it in a plastic bag in the fridge until I was ready to layer it with the sauce and cheese. Very good and easy Eggplant Parmesan recipe. Even my 21 month old ate it!

Baingan Bharta (Eggplant Curry)

Reviewed: Sep. 17, 2009
This was great. Cooked eggplant for 20 minutes. Did not peel. Scored it like a mango and push the flesh out...then cut the chunks off like you would a mango.

Scaled this recipe to 4 and cooked it exactly as the recipe stated. Both my husband and I loved it! We made it with rice pilaf and Italian Green Beans (from this website.) Great 5-star dinner.

Roast Beef Burritos

Reviewed: Jan. 7, 2013
Used leftover roast. Very good. I made 8 burritos out of these versus 6. Wrapped the meat mixture in tortillas and placed in a 9x13 pan. Covered the burritos with the cheese and baked in a 400 degree oven for 10 minutes, just to melt the cheese. Topped with lettuce and fat free sour cream.

Herb Roasted Pork

Reviewed: Feb. 26, 2012
Doubled the herb rub and the sauce. Perfect. The leftover sauce and pork would be great transformed into a Chinese dish with broc and other veggies over rice.
