Quick and Easy Chicken Noodle Soup

Reviewed: Nov. 25, 2008
Really good, quick, chicken noodle soup recipe. I cut up some raw chicken tenders and put them right in the pot once the veggies had their chance to cook. The boil and simmer cooks the chicken right up, so this was a time saver and less dishes to wash. I also added some garlic powder to the mix.

Beef and Bean Chimichangas

Reviewed: Nov. 25, 2008
I added the refried beans right in with the meat. The jar of taco sauce I bought was only 1 cup so I improvised with 1/4 C of salsa and 3/4 C of spaghetti sauce. Very good. My husband, 18-month-old, and I all ate it right up.

I didn't have teriyaki sauce so I just used soy sauce. So good...used fresh zuchinni from the farmers market!

Bolognese Stuffed Bell Peppers

Reviewed: Jun. 29, 2008
Really good. My husband, 14-month son and I both ate it up! I skipped the red wine b/c we were out. I added garlic and onion with the carrots and celery. This is a keeper. Filled 4 big peppers wonderfully.

Broiled Tilapia Parmesan

Reviewed: May 6, 2008
Very good. I took another suggestion and added about 2 T breadcrumbs to the mixture (I was only making a 1/2 recipe.) I also subsituted sweet white wine for the lemon juice b/c I didn't have lemon juice.

Chantal's New York Cheesecake

Reviewed: Dec. 31, 2007
This was my first attempt at Cheesecake and it got great reviews. This was so much easier than I thought and it was the best tasty cheesecake I've ever had. I followed all the "rules" I read in the reviews....used a warm water bath, left it in the oven for 4 hours, etc. No cracks, no sinking.

Banana Sour Cream Bread

Awesome. I am 6 months pregnant and woke up at 5:45 this morning starving and not able to fall back to sleep. I got up and had everything on hand (except walnuts) to make this recipe. I just ate a hot piece with butter....yum! Amazing!

Spinach Tomato Tortellini

Reviewed: Jan. 11, 2007
Wow! Good. I did make a few changes: * Added 1 T Tomato Paste - I knew we would want more flavor * Omitted Cream - for health reasons * Used 1 1/2 C LF milk with 2 T flour and 1/2 T cornstarch - thickened up really nicely. I can't wait to have the leftovers for lunch today. * Added another t of garlic

Absolutely The Best Shrimp Scampi

Reviewed: Jan. 10, 2007
Awesome! Only change I did was use 1/2 a small onion b/c I had no shallots. Cooking this is fun and the results are amazing. This recipe doesn't recreate a sauce...so if you want one prepare a butter sauce. I served with angel hair pasta...buttered with parm cheese.
