Pesto Scrambled Eggs
My two boys under 6 and I liked these....with some major reductions in measurements of cheese and oil. For 3 servings we only did a couple teaspoon of olive oil and probably 1/4 C cheese. Great with some whole wheat toast and bacon.

Sweet and Spicy Pork and Napa Cabbage Stir-Fry with Spicy Noodles

Roast Beef Burritos
Used leftover roast. Very good. I made 8 burritos out of these versus 6. Wrapped the meat mixture in tortillas and placed in a 9x13 pan. Covered the burritos with the cheese and baked in a 400 degree oven for 10 minutes, just to melt the cheese. Topped with lettuce and fat free sour cream.
