Tuscan Sausage Ragu

If I had three thumbs, this one would get a three thumbs up. Best pasta sauce I've ever had - EVER!!! Definitely not low-cal, but, hey, live it up. Second time I made it, I added a 1/2 tsp red pepper flakes to give it a bit more oomph.

Coconut Rice with Black Beans

This was incredibly delicious and quick and easy to prepare. I added a tsp sugar, some fish sauce, celery, thyme, garlic, salt and pepper, as well as some chicken. Also used the full can of coconut milk with some chicken broth.

The Amazing Swedish Meatball

1 tablespoon of salt is TOO SALTY!! Try with 1/2 tsp first and then if more is needed it can always be seasoned at table. Other than that, quick and excellent recipe.

Chicken Curry II

Easy to make and excellent curry. I used skinless, boneless chicken breasts cut into bite size pieces instead of whole chicken. I also added some baby carrots and frozen peas with the potato. I've made this a number of times and varied the quantity of curry powder so I can say that 3 tbsp = mild; 4 tbsp = medium and 5 tbsp gives you a hot curry.

Best Peanut Butter Cookies Ever

These are the best peanut butter cookies ever - melt in your mouth good!! I used reduced fat peanut butter (25% less fat) and cut the sugar down to 1 and 1/3 cups instead of the 2 cups. Quick prep, quick cook. It doesn't get any easier than this. Ideal recipe to do with children.

Thai Green Curry Chicken

Quite tasty, but, not hot enough for our liking. Next time I think I'll double the curry paste. I also substituted fresh basil for the cilantro and added some sugar peas. Will definitely make it again.

Award Winning Chili Con Carne

Excellent chili. I added hot italian sausage just to give it some extra substance and jolt. This is now a mainstay recipe for our household. Serve it with some corn chips, a dollop of full fat sour cream and some grated cheddar. Now that's a meal!!

Poppy Seed Lemon Cake

Have baked this twice now. First time followed recipe exactly but found result lacked that lemon tang and was also a bit dry. Second time, used full fat yogut and 2% milk, doubled the lemon juice and the lemon rind resulting in great taste and very, very moist cake.

Three Bean Salad I

The absolute best-tasting bean salad I've ever made. Sweet and zesty all at once with great colour. Gets better the longer it marinades. I would suggest, if you can, making it 2 to 3 days in advance.

Gramma's Date Squares

This is the best data square recipe I have ever found. As others, I eliminated the sugar in the dates. I also used melted butter - took some of the work out of mixing. Fast and easy to prepare.
