Simply Fudgy Brownies

Ooh so good! After cooled completely, about 1hr. I beat 1/2 cup butter, softened 1/2 cup p.b, 2 cups powdered sugar, & 2 tsps milk until smooth. Spread evenly over brownie base. Microwave 1 cup choc chips & 1/4 cup butter 30-60secs; stir until smooth. Cool 10mins; spread over filling. Refrigerate 30mins or until set. Enjoy! Store covered n frig. (for doubled recipe)

Oatmeal Peanut Butter and Chocolate Chip Cookies

I left out the water, used smart balance instead of butter, a little less sugar, half ww flour & unbleached all purpose, & everyone loved them! Thank-you for this great recipe!

Apple Brownies

I first made this for a garage sale with proceeds going to WRT. It went over so well. Now I finally made it for myself & know why everyone was going so crazy over it. I used smart balance instead of butter. I used half brown sugar. I used aluminum-free baking powder & unbleached four w/half w.w.. Then apple-pie spice instead of cinnamon. Both times I made it though it did require longer baking time so I put aluminum foil all over it a & baked it for another 10-30mins. Thank-you for the recipe!

Strawberry/Rhubarb Crumb Pie

Wow! This was sooo good! I did add a tsp. of lemon juice to the fruit mixture, 1/2 tsp nutmeg, for a 1/3 of the flour I used w.w (3 Tblsps total, 1 extra then recipe called for). I used the full 1 lb package of frozen rhubard thawed, my strawberries were also frozed but thawed. For the topping I did not have butter so used margarine def would've been better w/butter. I added 1/2 tsp powdered nutmeg & ginger & a full tsp cinnamon. I would def make this again! Thank-you!

Potato Curry

Excellent, did not have ghee so I used margarine.I know it would've been better w/ghee. I did not have cumin seeds so I just used powder. I did not have cayenne pepper so I just used chili powder. I needed to use up some milk so I used half 2% milk & half water. I only had vanilla yogurt on hand & it turned out wonderful. Instead of frozen peas I used frozen mixed vegetables & I increased the amount to 1 & 1/2 cups at least. I must not of cut my potatoes small enough though b/c I did have to cook them longer. I thought about adding more seasonings but there are different types of curry & decided to try this one just as it was. I would definatly make again, maybe next time w/more spices. Thank-you!

Applesauce French Toast

There are defiantly better ways to make french toast. The recipe was too bland for me. It is a creative idea though, & b/c I do not like to waste food I did finish it, but I do not think I will be making this again. Thank-you for the recipe.

Bacon, Potato, and Egg Taco Ole

I made two servings for my bf & I. Didn't have enough bacon so used a turkey linkette. I don't use black pepper so I just used seasoned salt, may have added other seasonings can't remember. I used my own hand made corn tortillas with maseca. My bf & I loved it, he was very impressed. Thank-you 4 this great recipe.

Cinnamon Swirl Bread

I wanted to make raisin cinnamon bread so bad but thought I had ran out of yeast. So I tossed in some raisins at the end must of been at least 2/3 cup. My cousin was coming over for breakfast the next morning. So I followed this recipe using unbleached bread fl & at least a 1/2 of the fl I used w.w., I used aluminum-free baking powder, & half & half for the milk. The next morning I used this loaf for French toast with the mix I had (2/3 cup half & half, 4 eggs, 2 Tblsps pure maple syrup, 1 tsp. vanilla, pinch salt) I didn't need to add anything to it it was soo amazingly good just like that. The only thing that stopped me from eating it was getting too full. My cousin was so impressed too. We both thought we were in heaven when we ate this.

Eggless Tofu Spinach Quiche

I made my own crust by sifting/whisking 1 cup all purpose unbleached fl & a 1/3 cup w.w. fl or half & half with 1/2 tsp of salt. Then mixing 1/2 cup melted margarine or vegetable oil with 2-3 Tblsps half & half or other cold milk or even water. Combine the wet & dry, stir as little as possible. Pat into pan. I did not use black pepper (I've heard it's not good for your health), instead of salt in the filling I used seasoned salt, I also added at least a Tblsp of nutritional/brewer's yeast flakes. For cheese I just used what I had on hand a blend of shredded Colby & Monterrey Jack. It was soo good soo delicious. I did have to bake it 20 mins longer than directions say. Turned out perfectly. I have some artichoke hearts & have been trying to decide how I want to use them. As an afterthought I thought they may go well thrown into the mix. I will definitely make again & maybe try adding some small artichoke pieces. Thank-you for this recipe! Everyone who tried it loved it!

Black Bean Brownies

My best friend came over for a visit just as I was putting this into the oven. She , myself, & everyone else who tried these thought they tasted just as good or better then brownies made with flour. We couldn't even tell they were made with blck beans. Also I used dried black beans that I had prepared/cooked with jalapeno, empazote, & onion. I thought that canned beans are seasoned a bit too & I had made plenty of beans some for eating w/rice, etc. which I seasoned further & some I knew I wanted to use to try this recipe & sure enough it turned out perfect. I also did use special dark chocolate chips & it was a hit w/everyone who tried it! Thank-you Elizabeth for coming up w/this great idea. I'm just wondering what inspired you to use blck beans in the first place?Thank-you, thank-you! Sooooo gooood!

Horchata

I did do this a bit differently. Before making it I guess you could say I did some research & read through almost every horchata recipe out there. So I used long grain brown rice & doubled the recipe. I poured very warm water over 2 cups of the rice & let it soak for about 9hrs. I then drained, quickly rinsed it & blended it using a little water if necessary into a paste or fine powder I then added it to a gallon + a pint or so of water, three cinnamon sticks, 1/2 tblsp of MX dark pure vanilla extract, 1/2 tblsp of lime juice & left it in the fridge for at least 2 hours. Following that I added about a cup of sugar (more or less depending on how you like it). Then strain the mix through a metal mesh filter, and then through a wet, damp cheesy fine-cloth. I just used the cheese cloth quadruple layered, which worked. Before straining though always make sure the mixture is mixed very well. Horchata is a drink that separates & always needs stirring. The straining procedure is what takes the longest, but if you love horchata like I do it is all worth it b/c this came out just the way I like it. I did add powdered cinnamon in the end just before straining as I was tasting what had been strained there wasn't enough cinnamon taste for me (just depends on how you like it). I give four stars b/c I did not follow this recipe but the horchata I made was definitely 5 stars I even shared it with some His

Creamy Apple Cinnamon Raisin Oatmeal

I followed the recipe but added at least a tablespoon of half & half (for thicker/creamier consistency) & at least a couple tablespoons of walnuts (for protein & to make it a complete meal). It was sooo delicious & filling! Thank-you for this recipe!

I've made this recipe several times now, shared it w/friends & family & it's always a hit! For flour I use a mix of unbleached a.p. flour & about a 1/4 of the flour called for I use whole wheat. I use aluminum free baking powder, smart balance margarine instead of butter, always pure vanilla extract, & dark chocolate chips with the highest cacao content to make it not only delicious but nutritious! I will definitely make again!

Dee's Date and Nut Bread

I only needed to bake for 45mins. Thankfully my sense of smell led me to check it earlier or else it would've burnt & been no good. Toothpick came out clean, turned out wonderful & delicious! I used fresh strong brewed coffee instead of the boiled water. I would definitely make again.
