Thai Chicken Cabbage Soup

This is a great soup that allows you to add any of your favorite spices. I've made it many times and usually add Fish Sauce, garlic, ginger, 5 spice, jalapeno, green onions and juice of 1 lime. Since I try to avoid gluten, I either don't add the egg noodles or use kelp or shirataki noodles instead. Bean sprouts, cilantro, and basil make great garnishes for this soup too. So healthy and delicious!!!

Crustless Spinach Quiche

Great for us who are trying to do low carb. I used lots of fresh chopped baby spinach that I added to the onions after they were starting to get a little soft and added fresh garlic and a minced cayenne pepper for some heat. I only used about 2 cups of cheese but added a 6th egg. Tasted very healthy and delicious.

Thai Ginger Chicken (Gai Pad King)

I love the flavors of this dish. I did make a few changes--1. I used 1lb of thinly sliced sirloin instead of chicken which I marinated in a tbsp. of hoisin sauce, a tsp. of oyster sauce, a tsp. of sesame oil and a tbsp. of red wine. 2. I minced the ginger and only used 1/4 cup. 3. Did not add sugar nor salt. 4. Added a diced cayenne and jalapeno from my garden to give it more heat. 5. Added a tsp. of cornstarch to the 2 tbsp. of beef broth (used instead of chicken broth) and chili paste along with a splash of sesame oil. 6. added fresh torn basil last minute of cooking. Just my personal touches/preferences, but I'm sure it would be great as is.

MMMMM... Brownies

Great recipe for those who love fudgy chocolate brownies. I loved the fact it only calls for 2 tbsp. of butter. They're decadent, yet not too buttery or sweet. I thought they were even better after spending a night in the fridge. Thanks for sharing!

Favorite Banana Blueberry Quick Bread

This is the best banana bread recipe I have tried so far on this site. I was looking to use up some pecans and I had to try this one since it also used blueberries. I used a cup of frozen that I had let thaw on the counter on paper towels. I didn't have shortening so I used coconut oil and it was fantastic! Perfect consistency. Thank you!

Chicken-Fried Steak Strips

Chicken Noodle Salad with Peanut-Ginger Dressing

Cabbage Beef Soup

This was SOOOO good. Since I was just making it for 2 people, I cut the recipe in half but still used a whole head of cabbage and it was perfect. Used extra lean ground beef 96/4 and added fresh garlic. I slow cooked it on the stove top. Will be making this again and again!! Thanks for a great recipe using cabbage!
