Hudson's Baked Tilapia with Dill Sauce

This is such a fantastic dish! Light and flavorful, it's perfect for any occasion, especially after a long day. Super easy to make and such a reward when it all comes together. I used cayenne pepper instead of cajun, but it's in the same family, and it tasted great. Yum!

Warm Black Bean Dip

Really good! The only thing I would change next time would be to not drain the whole can of beans. It's a bit dry, even with the cheese & olive oil. I also love spicy things, so I added cayenne pepper and 1/2 tsp hot sauce. I'll be making this again!

Twice Baked Sweet Potatoes

SO good! I didn't add any oil and put quite a bunch of brown sugar in them. Delectable. Thank you for this recipe, I will be using it again! Although not everyone has quite as much of a sweet tooth as I do, so I'll have to add less sugar. :)

Strawberry Vanilla Pancakes

Really good, however I did make a few drastic changes. After finishing, even while skimping on the vanilla a bit (only about 1/4 tsp is what I skipped), I added another tablespoon of unbleached flour (which is what I used throughout) and skipped the strawberries (mine were frozen and I forgot to thaw!) however added the zest of a whole orange along with the juice (just by squeezing, so I didn't use all of the juice). Probably one of the best pancake recipes I've tasted. Thanks!

Easy Garlic Broiled Chicken

This was such a simple, quick, DELICIOUS recipe for broiling chicken. The plan was to broil 5 chicken legs (took the skin off) and pull the chicken to put into a fettuccine dish; however, after tasting the chicken (& licking my fingers... mmm), I decided to keep 2 of the legs just to enjoy for later! The dish was a bit skimpy on the chicken side, but it sufficed, and now I have 2 delicious chicken legs to look forward to this week :) Thanks for this!!

Yummy Honey Chicken Kabobs

Easy & fun to make. I doubled the sauce & still had to stretch it a little bit. Going to try with steak next time (minus the honey addition). Try with mashed potatoes!

The Best Mashed Potatoes

Very very good. I used all but 4 of the yukon gold potatoes in the huge plastic bag in the grocery store, so not sure how many pounds that is, but it makes a LOT. Unfortunately I didn't have a lot of milk to add to them, so they weren't as creamy as I'd like, but they were delicious! Will make steaks next to eat with potatoes.

Best Ever Pasta Salad

Really good & really easy! I too took some advice from other reviewers and cut the mayo to 1 cup. Also added some fresh lemon juice. I love dill so it wasn't too much for me :) I used farfalle instead of penne, but that was a personal preference.

Best Big, Fat, Chewy Chocolate Chip Cookie

The best chocolate chip cookie dough (yes, dough) that I've EVER had... and, if the dough is that amazing, the baked cookie is just as good!! I like pretty chewy cookies, so if you're like me, take them out right at 13 minutes. The inside will be super chewy & yummy.

Swanson® Rosemary Chicken and Roasted Vegetables

Ok so I changed it a little... usually I use recipes to give me a base (cooking time, etc.) and then I do my own thing once I get started. Put half a lime, half a lemon, an entire head of garlic cut in half, one small onion cut in half into the chicken (inside). Then I rubbed the chicken with a good amount of olive oil (probably 2 Tbsp in all... use your judgement), 0.5 Tbsp sea salt, 0.5 Tbsp pepper, 1 tsp rotisserie chicken spice rub (at store), with about 1/2 cup Swanson chicken broth over the chicken & into the roasting pan. Also in the roasting pan I put a few cloves of garlic & a squirt of the lemon & lime that I put into the chicken. Roasted it using the exact time this recipe called for and it could not have been better!! So juicy & delicious. Will use this roasting time & temp every time I roast a chicken.

Banana Pancakes I

Easy, fun and delicious. Every bite is full of banana ( I smashed them up pretty consistently but not enough where there aren't chunks) and once they hit the frying pan, the smell is amazing :) I added 1/4 tsp of vanilla extract (I add it to everything) to add a bit of flavor. Must try!!

Apple Strudel Muffins

Very good. Added nutmeg and cinnamon (about 1 tsp cin & 1/4 tsp nutmeg) and chopped just one apple (should have doubled it!), and it was pretty moist. I'll be making this again.
