Slow Cooker Roast Beef

Obviously this does not need 22 hours to cook! I put mine on high for 5-6 hours, then turned it down to low once it was nice and tender. My son who just started eating beef this year said he wishes he could have it every night. I'm so glad to finally have a slow cooker beef recipe that has some flavor! The soy sauce and onion soup cannot be beat. If I'm not feeling lazy at the end I thicken up the liquid with flour or corn starch.

Ken's Perfect Hard Boiled Egg (And I Mean Perfect)

Baked Zucchini

Cooking time is way too long...20 minutes should be fine. I spray a cookie sheet with Pam, put the sliced zucchini on top, and spray the tops of them with Pam. Then top with herbs/cheese. Easier and less messy this way.

Anthony's Lime Chicken with Pasta

Everyone in the family ate it, so what more can ask for? A few changes...I didn't bread the chicken, used the juice of 2 limes instead of the lime wedges, and used fresh diced tomatoes. Yummy!!

Honey Corn Bread

My kids could not stop eating this! I doubled the recipe and baked it in a 13x9 glass pan for approx. 30 minutes at 375. The only other changes I made was to eliminate the corn because that sounded nasty to me. (sorry!) I also used way less vanilla, like maybe 2 tsp for a double batch. The kids want me to make it again! Thanks!!

Whipped Cream Cream Cheese Frosting

This was delicious! I substituted about 1 1/2 cups of powdered sugar for the granulated sugar, and refrigerated it for a while before frosting. Yum!

Famous Butter Chicken

This was pretty good, and the whole family ate it, which is always a good thing! I sprinkled the chicken with salt, pepper, and garlic powder before the egg and crackers. I only used 1/4 cup of butter and that was plenty. I'll be making this again.

Sloppy Joe Sandwiches

This was good for a sloppy joe. I made it as written except cooked diced onions and garlic with the beef in place of onion and garlic powder. I thought it was a little too ketchup-tasting, but I'm not a huge fan of ketchup anyway.
