Buttermilk Pie IV

Reviewed: Nov. 30, 2013
I had no problems with the pie over flowing or cooking time. The only problem I had was the sugar wouldn't cream for me...I have no idea why this happened. The end product was very sweet but good. I used sugar free cool whip on it and that toned down the sugar a little. Also; this pie tasted better, the longer it sat. My son will love this pie because it tastes like pecan pie without the nuts and that right up his alley.

Chocolate Banana Cream Pie

Reviewed: Mar. 31, 2013
I cant imagine why anyone wouldnt love this. I used a Marie Calander frozen pie crust -excellent. Added a little extra chocolate and a touch of dark rum; maybe a 1/2 tsp....It really added nice flavor. Extra Bananas. White chocolate pudding, because thats all I had on hand, and toasted the coconut. On a side note; I refrigerated pudding so it would thicken up and then added coconut in with a wire wisk. I used only 1c of coconut in the pie and topped it off with remaining...Amazing!

Candied Sweet Potatoes

Reviewed: Jan. 1, 2013
OMG! THESE ARE SO GOOD! I accidently added all of the marshmallows to the melted butter mixture. It was so good....My son who never likes the holiday sweet potatoes loved these too. They were a bit sweeter then we're used to, but we loved them.

Creamy Chocolate Frosting

Reviewed: Dec. 26, 2011
The frosting turned out excellent but had to do a lot of ajusting along the way. It was to thick and sweet as written (for my taste) so I added extra butter and cream till i had the texture and taste I liked. about 2 tbls extra butter, 2 tbsp extra evap milk and some heavy cream till I got the consistancy that I liked. Once I did....I loved this frosting! Will use this recipe again.

Christmas Breakfast Sausage Casserole

Reviewed: Dec. 26, 2011
I didnt have high expectations because it seemed too simple to be that good. Boy was I wrong....this was the star at my christmas brunch. They raved more about this than the ham! Let me tell you what I did; I used french bread, cut into cubes instead of sliced bread. I thought i blew it because I accidently added 6 CUPS instead of the 6 slices, it called for. I added a handful of the mexican blend of cheese from costco and then a little over a cup of sharp cheddar. I added 1 extra egg and only used 1 cup of half and half instead of 2 c milk. I added a few tbsp of chopped green onion and that is is! So easy. Next time I make this I would do it exactly the same way. What a great recipe!

White Chocolate Raspberry Cheesecake

Reviewed: Nov. 25, 2011
10 Stars!!!! This was the best desert Ive ever tasted. I was afraid of the rasberyy sauce because I thought it would be to bitter, but it wasnt...infact it made the desert. The recipe didnt say whether to use sweeted or unsweeted rasberries so I used unsweeted and added a little extra sugar to taste. The crust was a little too moist so I might adjust the butter next time. I used generic oreos and scraped the cream out of them and crushed in a food proccesor. I aslo used a big handful of extra white chocolate chips because others said they couldnt taste the white chocolate. Im telling you.....This was the best desert Ive ever had.

Stuffed French Toast II

Reviewed: Oct. 2, 2011
To be honest, I couldnt even try these because Im on the diet from hell. BUT, I made this for my son with the ingredients that I had on hand; Whole wheat bread and rasberry keylime jelly, and I also did some with sugar free stawberry jelly. I also added a touch of orange extract and sugar to the cream cheese mixture. We didnt use any syrup but I think whipped cream and powdered sugar would be perfect. He told me they were great and reminded him of filled donuts. Next time we might try them with lemon curd and see how that goes....Never used it before, but it sounds like a good idea..:))

Blackened Chicken

Reviewed: Oct. 1, 2011
LOVE THIS seasoning! Only made a few changes; I did almost everyting X4. I subtracted the cayenne by 1/4 tsp. Also, I didnt have onion powder, only onion salt, so I used less salt and added 1/8 x 3 of onion salt. Let me tell you how good this is on shrimp and fish!!!! Holy cow me and my son could eat this every day of the week. The shrimp is amazing cold, the next day too. Cant get enough of this....thank you for sharing.:) Just a side note; I lightly coat the shrimp and fish in cocnut oil, put just a touch in a frying pan too, to blacken. Coconut oil is SO good for you! Much better choice than anything else...

Colleen's Slow Cooker Jambalaya

Reviewed: Sep. 26, 2011
So fast and easy. Went to a local butcher to get the sausage and it was well worth the effort. It added great flavor to this dish. I only used 1/2 of the cayenne pepper, but everything else, as written. I served over minute rice but next time will ad regular rice to the crockpot as suggested by others. I got rave reviews on this....Its a keeper!:)

Easy Vodka Sauce

Reviewed: Jan. 17, 2011
OK, can I give this a 15! I thought this was a delicious pasta sauce. I cut it in half and added a crushed garlic clove. I also added salt to taste. Thats it! I made it the night before because our plans had changed so I put it in a container until the following night. I gernerously seasoned boneless skinless chicken breast with sea salt, fresh ground pepper, fresh lemon juice and olive oil, and grilled it. I served it with penne pasta, sauce on top, and it was incredible. I think I might ad sundried tomates next time...not to many but I think that might be really good in there too..

Cranberry Orange Cookies

Reviewed: Jan. 17, 2011
OH MAN! This is the best cookie Ive ever had! Its buttery and crispy on the edges and has a zesty taste to it, but not over powering at all. Wonderful! I added pecans instead of walnuts and I halved the recipe. There is no way half would have made 24 cookies though. I should have done the full recipe.
