Slow Cooker Texas Pulled Pork

Made this meal with the exact recipe using Open Pit (not my first choice but we had an over abundance of it) Before shredding, I took a little bite and thought that it was a bit too tangy and vinegary (and I love vinegar). I also thought the thyme made a bit too much of a presence, but once I added the extra sweeter BBQ sauce, it was unnoticeable. To save this meal, I added some sweeter, thicker BBQ sauce (maybe about a 5-second squirt of it) and some more brown sugar, which probably didn't do much. I let it cook on low for another hour so the shredded pork soaked up the juice and it was delicioso.

Grandman Pork Chops and Rice

I've not tried this recipe but this is one of my favorite dishes my mom used to prepare when I was growing up! However, just a tip...I suggest to use tomato sauce as opposed to tomato soup since the tomato base is the main flavor of the dish...unless you happen to find tomato soup more palatable. Also, we add green peppers in with the onion for a little added flavor and sometimes even garlic if I have some to get rid of. Next time I make this dish, I will also try adding the taco sauce, which we have never done in the past.

Slow Cooker Roast Beef

I made this not too long ago...it was a bit salty, and while I'm not a huge fan of salt, I still enjoyed it. Next time I think I will cut down on the soy sauce a little (maybe half soy and half beef stock or water?) since it's not one of my favorite flavors. I think I threw some A1 in there, as well. I think I cooked it for the whole 22 hours (against user recommendations) since I didn't take into account the fact I had to work...heh...but it still came out tender and juicy. Was a great and quick leftover homecooked meal to pack up and take up north for the weekend. Although I said I enjoyed this meal, I don't think I will make it again as is due to the sodium content and cooking time. This recipe isn't really so complex that you can't find something else on this site to compare therefore, "it was OK"...

Sue's Taco Salad

I love this recipe for warm summer nights! It's nice and refreshing and you don't have to stand over the stove for very long AND you can get rid of veggies easily without altering the taste too much. However there are a couple changes I usually make when making this recipe...I use spices I have on hand (Chili powder, garlic powder, salt, cayenne and cumin to taste) instead of taco seasoning. I toss in some finely chopped green peppers (since that's what I usually buy and never end up using!). I switch between black and kidney beans, and sometimes use both. I use Spanish onions as opposed to green because we really like onion flavor in this family and we use creamy Italian dressing, which we both prefer over the French. I also tend to mix everything but the lettuce, chips and dressing since we both like the lettuce crisp and the chips crunchy and have different ideas of what a substantial amount of dressing is... Although this recipe is great, don't be afraid to play around with different veggies, dressings and chip flavors!

Chicken Enchiladas V

Made this recipe last night and my Mexican food- hating boyfriend loved it! What's nice about this dish is that you can alter it to it your tastes/what you need to get rid of... That being said, I added green peepers, minced garlic, salsa and some extra spices (chili powder, cumin, salt) to the onion pan. The cream of chicken/sour cream mix was good, but I think next time I will try it with the Campbell's "nacho" cheese I saw at my grocer. I forgot to put the mix inside the enchilada, but that didn't seem to make a big difference... All in all this was pretty good (but not mindblowing) and will be made again!

Creamy Rice Pudding

I've made this twice and it came out fantastic both times! I omitted the raisins and added a little cinnamon to the end product and it was as delicious as ever! Next time I think I will try incorporating maple syrup into the mix instead of sugar...
