Thai Spicy Basil Chicken Fried Rice

excellent recipe. Have made it with tofu and that is equally good. The other modification I made one of the many times I've made this was to use quinoa instead of rice, makes for a delicious dish and you can eliminate the chicken when using quinoa.

Orzo with Parmesan and Basil

Very tasty and very easy. I added 2 cloves of garlic to give it a little more flavor, but this is a keeper.

Tom Ka Gai (Coconut Chicken Soup)

excellent soup, everyone that I have made this for loves it! I've used light coconut milk to make it a bit healthier it doesn't change the great flavor. I have also substituted shrimp for the chicken, and I actually prefer it that way now. Very easy and very tasty!

Angela's Awesome Enchiladas

excellent recipe. I used a suggestion from a previous review and cooked the chicken in the crockpot for 4 hours with chicken broth, taco seasoning and a bit of cumin. To make the shredding easier and quicker, use your hand mixer, it is a breeze! You need to make these!

Creolized Stuffed Chicken Breasts

This is an excellent dish! My husband and I decided that it goes in the "good enough for company" file. My only suggestion is to go easy on the cajun seasoning, mine ended up a little too salty for our taste. Served with some wild rice and the side and we had a wonderful meal!

Catherine's Spicy Chicken Soup

excellent soup! Very easy to make and a real crowd pleaser. I followed just as written but substituted frozen corn. I also topped with 1/4" strips of baked corn tortillas, a very nice addition to a perfect soup!
