Tomatillo Guacamole

This was really tasty and was eaten up quickly. I think we added more lime juice and red pepper flakes than it called for and much more salt and pepper...but my husband and I like things really seasoned. Loved it!

Slow Cooker Creamy Potato Soup

Great recipe, delicious soup. I changed some things for personal preference, but I don't think it's fair to doc stars...if I made changes for my personal taste. Used 2% milk instead of cream to cut down fat. Added carrots for extra veggies. Didn't put the bacon bits in until it was served, as suggested by others, it stayed nice and crispy. To make up for the fat avoided by using milk, added a bag of cheddar cheese. ; )

Spaghetti Pie II

Knew I was going to change this recipe a lot before I started...I took pieces from a few recipes. But this was a great base. I used whole wheat noodles and mixed with just the eggs and parm, to reduce some fat from the margarine. I also subed some sour cream for cottage cheese and it was really tasty. My pie pan wasn't big enough, so we used a square pyrex that worked really well. Made some focaccia bread from All Recipes to go with it, such a TASTY meal.

Easiest Focaccia Recipe

Very good and VERY easy! I used a Kitchen Aid mixer with the dough hook instead of hand kneading and it was great. The water it mentions to add after the main ingredients are mixed...I jut added it tablespoon by tablespoon until the flour was all mixed in. I added salt into the flour mix, but will add more next time, probably 2 teaspoons. I also added fresh herbs and minced garlic on top. YUM. So good.

Red Velvet Cupcakes

GREAT recipe! Don't make any changes to the ingredients...but after I take them out of the oven I immediately wrap them in tin foil for 10 minutes. Then, I put them on a cooling rack and tent the foil. They are moist for DAYS. Yum!

Sweet and Sour Dipping Sauce

Really great sauce for the cream cheese won tons we made...a bit heavy on the vinegar, but I like vinegar, so great for me, but a little overwhelming. Easy, easy, thank you.

Chicken Breasts with Lime Sauce

This was a GREAT recipe, I can't believe how tasty it was! The only thing is that I didn't have enough 'stuff' to make the sauce and had to add more to make enough for 2 chicken breasts. I also subed chicken broth for some butter to cut down on fat and that was really tasty. All in all, great recipe.

Hearty Turkey Soup with Parsley Dumplings

Great recipe, took much longer for us, because we doubled it because of the large turkey carcass, but it was a good lazy day to do it. I would add more chicken bouillon as one other user noted, I put in 4 cubes. We didn't have a rutabaga, so just used potatoes. Our dumplings were too big, so be careful not to do that like we did. All in all - GREAT recipe.

Italian-Style Quinoa-Stuffed Sole

This was a really fast and easy dish, I couldn't believe how quick it was! The sole we had was a little too fishy (not an issue with the recipe of course), otherwise all of the flavors were great with it and helped tone down the fishy-ness. I love vinegar, so I'll add more next time.

Potato and Bean Enchiladas

This was SO, SO tasty. Trying to cut down on fat/cal, so didn't fry the tortillas and was still really good. Didn't have pinto beans in our pantry so I used black bean, again, still really tasty. I had some leftover potato mix I used in breakfast burritos the next day! Yum.

French Leek Pie

This had a great flavor, taste to it. We didn't know what 'light' cream was (didn't see it labeled in our store) and had to buy heavy cream. Make sure it's light, with the heavy cream, it didn't bind and was runny. Giving it a 5 because it was my mistake, but very good dish. Very rich.

Super Moist Pumpkin Bread

This is a great recipe, my husband almost ate one whole loaf in one sitting! I changed a few things to lower fat/cals and it was still SO moist and tasty. Used light coconut milk, subed olive oil for veg oil and actually used less than 1 cup, made it up with the coconut milk. I'm not a fan of nuts in bread, so left those out. Didn't have coconut and was still DELISH without. A+!

Simple Kale Soup

We also had kale from our CSA and didn't want it to go to waste. This is a GREAT recipe and the first time we've had kale, what a wonderful soup. Per the other comments I added onions, garlic (before boiling the broth) and tabasco. So easy! Make sure not to add any salt, the broth and turkey ham add a lot.
