Best Brownies

I am rating the brownies only because I did not make the frosting. These were delicious, melt-in-your-mouth, hurry-up-and-eat-the-whole-pan-before-the-family-gets-home-because-I-cannot-share-these amazing brownies. I made a couple more batches for my daughter's bday treat at school and the entire 3rd grade class raved about them! Plus it was so simple and easy to make even with my family's dietary restrictions it is nice as a mom to say "Yes!" to something as delicious as these.

Cheese Dipping Sauce

This is a pretty good recipe overall but WAY too salty. I will cut the salt to no more than 1/4t next time although I think it could probably be omitted all together. I also left out the mustard because I was planning to mix with homemade salsa to make a queso-type dip. I wish I could rate higher but that salt just killed it for me.

Gingerbread Boys

A holiday must in my house! We make these each year, no matter where we are staying (I've even brought the supplies when we've gone vacationing in a cabin or condo over Christmas break!) I send some to family out of state because everyone likes them so much! I sub molasses and cut down the sugar as others have suggested. My favorite way to enjoy is without any decorations, early in the morning with a hot cup of coffee. Preferably with carols playing in the background.

Eileen's Spicy Gingerbread Men

I thought these were just OK. I was cooking them in a different oven than my own so it could have played a part in how they turned out, but I thought they were a little bland and came out very hard and dry. Also I never cook with processed foods so I used butter instead of margarine.

Rich and Simple French Onion Soup

This is the first French Onion Soup I have ever tried to make and the first time it came out amazingly good! Even my daughter who does no like onions liked this! I browned the onions as others did and I am still playing with the amount of oil & butter. I like the taste but it is a bit too oily for my tastes. I tried it with roasted garlic loaves from Costco and Oh my goodness is it good! Yummers! Thanks so much! Even this busy mom can make a yummy and somewhat fancy (looking) meal!

Cream Cheese Pound Cake I

I made this for my son for his birthday and it was a HUGE hit! I am making it again for Easter tomorrow. I did follow some of the suggestions (thank you so much!) like 2 1/2 cup sugar, using 1T and 1t vanilla and no almond extract. Frosted, glazed or plain this cake is amazing. Certainly not diet-friendly but certainly worth the slurge!

Chai Tea Mix

YUMMY! I made this for my kids' teachers for Christmas. Of course I had to taste it first to make sure it was as good as all the raves claimed and now I have to make another batch! I made it just as written with the extra spices (not the pepper though) and sub'd the vanilla creamer with the vanilla/sugar recommended in the footnotes. Brilliant! I am going to be making this a lot! I want to try it with stevia next. Thanks sooooooo much!

Pumpkin Raisin Scones

This was a fun and simple recipe and the results were yummy! I substituted the sugar with 3 packets of Stevia (Truvia brand if you care to know) and I think next time I may use 4. I was 3/4 cup short of pumpkin puree so I used extra applesauce (homemade with a touch of stevia and cinnamon). I left out the nuts and used dried cranberries instead of raisins. These are very light and more bread or muffin-like than scones which I prefer to be dense and heavy. Still the flavor was great and my kids and I really enjoy them! Thanks!

Strawberry Cake from Scratch

This was the first ever "From Scratch" cake I have attmepted and I have to say it turned out FANTASTIC! I cut the sugar down to 1 1/4 cups, sift the flour first ( mix of 2/3 unbleached all purpose and 1/3 whole wheat), and beat the egg whites to soft peaks and folded in at the very end as suggested by other reviewers. It was amazing if I do say so myself! I ate so much I decided to go off refined sugar this month to detox! Now my other daughter wants the same cake for her birthday next week so I am going to try it with Stevia. Thank you sooooooo much! I will never do a cake from a box again!

Picante Chicken

So easy it hurts! We used a sala that contained corn, black beans and roasted chilies and it was amazing! I used 4 chicken breast halves covered in salsa and cooked it in my crockpot. YUM!

I had a hard time choosing if this was a 3 or 4 star recipe. It was easy and my kids loved it, but it wasn't amazing. It was pretty tasty too! Even cold te next day. I look forward to playing with this recipe! Italian? Taco? Chili? Fun!
