Oven Scrambled Eggs

These came out fluffy and perfectly done. Very easy, and practically foolproof; the only thing missing is a pinch of salt. I would, however, recommend spraying the sides of the pan with nonstick cooking spray, because the eggs will stick to the sides of the pan. If trying to cut calories, the butter can be omitted, but this makes the nonstick spray all the more important. I cut the amount of ingredients in half and used an 8"x8" glass Pyrex dish. Everything fit fine, but because of the deeper depth, I ended up cooking it an additional fifteen minutes (specifically, after step three: stir + cook ten minutes + stir + cook five minutes + remove from oven). By doing this, the eggs were scrambled hard with no browning and no leftover runniness (the way I like -- others may want to pull them out instead of giving them the extra five minutes).

No-Fuss Sweet Potato Pumpkin Mousse

EDIT: Revising my review after making this using a food processor. This is a fantastic dessert with a huge "wow" factor. You could probably substitute yogurt or vanilla pudding in place of the whipped cream for variety. This time around I also didn't put in any of the reserved liquid and found the texture to be a little less thin. Thought that I could combine the canned sweet potatoes and canned pumpkin using a hand mixer - big mistake. Couldn't get it perfectly smooth and was stuck with tiny sweet potato chunks. Use a food processor.

Yogurt Chocolate Chip Cookies

Hands down the best cookie I've ever made. It was so good I got rid of the rest of my chocolate chip cookie recipes! But, if you prefer cake-like cookies, you'll probably be lukewarm about this recipe.

Carla's Fruit Dip

Tastes fantastic. For best results, let the cream cheese soften first, otherwise it will be difficult make the dip as smooth as in the picture (there will be very small but noticeable chunks of cream cheese). As-is, the marshmallow is the dominant flavor; next time, I'll use a little more whipped cream, but that is just a personal preference.

Dark Chocolate Cake I

This is a great recipe, but if you're a beginning cook, be careful not to overbeat the batter. Overbeating makes the texture of the cake drier which is far more noticeable in a dark chocolate flavored recipe. Greasing and flouring the cake pan, as well as removing the cake from the pan before it fully cools, will prevent tearing when removing the cake.

Chocolate Cream Cheese Frosting

This is very good for someone who likes a very sugary icing. Creamy and sugar and delicious. If you prefer something subtler, this isn't the recipe for you, though.

Cream Cheese Pound Cake III

This was SO. GOOD. Dense, creamy, and sweet. I made a lemon glaze for topping out of confectioners' sugar and lemon juice; next time I'll do a reduction of raspberries. Definitely a recipe that can be used over and over again and reinvented by what you serve it with.

Tomato Curry Chicken

After cooking the onions and stirring in the beer and spices, I personally didn't think this was spicy enough. So I added 1 1/2 tablespoon paprika, 1 1/2 tablespoon of cumin, 1 tablespoon of curry powder, 1 teaspoon of garlic powder, and salt. Then it was delicious!

Fiery Fish Tacos with Crunchy Corn Salsa

I couldn't find Tilapia at the grocery store so I substituted it with Orange Roughy. I rubbed a thin layer of the spices directly on both sides of the fish, then grilled it in a pan coated with olive oil and butter. I also made some basmati rice with butter and cilantro. My family loved this recipe -- I had one comment that it was better than Chipotle.

Christmas Morning Frittata

I omitted the bread crumbs so I can't comment on how they would change the recipe. But I can say that this frittata was fantastic -- I made it for my family for Christmas and the entire thing was devoured. Definitely don't cut back on the cheese, it's what makes the recipe.

Good Old Fashioned Pancakes

These pancakes were buttery and delicious. They bake up very thick and fluffy. Sifting the flour at least once makes a huge difference, do not skip that step!

Feta Cheese Turkey Burgers

These were delicious -- the feta made the burgers really juicy and delicious. My only edit was that instead of putting the salt and pepper in the burger mix, I sprinkled salt and pepper on the top and bottom of the burgers before putting them on the grill. This way, the burgers were a little crispy on the outside and melty on the inside. Yum!

Eggplant Burgers

I love the idea for these burgers and I was super excited to make them. You just have to watch out how you cook the eggplant -- it's a very watery vegetable and becomes mushy VERY easily in the microwave. If I make these again, I will put the eggplant directly on the stove after cutting and peeling it.

The Best Rolled Sugar Cookies

I used this recipe to make cut-out sugar cookies for christmas gifts -- I made christmas "trees" from them. I used decreasing sizes of star-shaped cookie cutters, frosted the cookies with green buttercream icing, then stacked the cookies from largest to smallest, slightly rotating each star to look like boughs of a christmas tree. Admittedly not my idea, but the cookies were a huge hit and loved by all! Is now my "default" recipe for sugar cookies.
