Whole Grain Breakfast Cookies

I had to make a few substitutions, but these are just awesome. I used honey instead of agave nectar, applesauce instead of oil, and peanut butter instead of almond butter. I'm sure they would be even better with no substitutions, but this was a winner with my husband and my 17 month old!

BBQ Pork for Sandwiches

This was amazing. I forgot to put it in the slow cooker before I left for work so I pressure cooked for 90 min instead. Followed the rest of the recipe to the letter. Used Sweet Baby Rays bbq sauce. Wow. This was incredible. Possibly even better the next day.

Skinny Fries

I made some improvements but this recipe is a winner as is too. I had some duck fat leftover from another recipe so I used that instead of butter, and added some minced garlic. So good.

Thai Curry Soup

This is delicious, even with a few modifications I had to make. I used chicken instead of shrimp, frozen spinach instead of fresh, garlic powder instead of cloves, and left out the lemon grass. Even with all of these shortcuts, it was still delicious and reminded me of Noodles and Co.'s dish

Chocolate Toffee Cookies II

Wow! These are now my favorite cookies. I did not change a thing, except I left out the almonds (personal preference). I've made them twice and they've been great both times.

Mom's Zucchini Bread

Ok, this is really good...With a few small changes it still tastes awesome but can be a lot better for you. First of all, for me using 1 c unsweetened applesauce instead of the oil is a must. I really don't notice the difference. I also reduced the amount of sugar to about 1 3/4 c and used half brown sugar. I used half a banana plus 1/2t of baking powder instead of the third egg. I think even with those changes it's still too sweet and I'll probably use even less sugar next time.

Cheesecake Bars

These bars were very good. I made the mistake of using a 9x9 pan instead of 8x8 so they were rather thin. I also had to substitute white sugar for brown because I was out, which I don't recommend, but it worked ok. Despite these things they were still delicious and were gone within 24 hours.

Zesty Grilled Chops

This was really good. I generally don't like pork chops, but I really enjoyed these. I only had time to marinate them for an hour or so but I basted them a little more while they were on the grill. They were very moist and flavorful.

This is really good. I only had frozen berries, so I had so add a little extra milk, but the consistency was perfect. We added a little extra honey for our taste, maybe another teaspoon.

Braised Balsamic Chicken

Wow. This is now on our regular rotation. Used 4 large bone in breasts and browned on stovetop then braised for 30 min at 375 in oven. Also added a couple garden tomatoes cause we're trying to use them up. It made an amazing sauce for angel hair pasta. I'm sure its good with boneless skinless as well but this was amazing!
