Cranberry Scones

I took these to a pre-Christmas celebration and I got rave reviews ("best scones I've ever tasted" from my mom!). For those that complain the batter is to runny, make sure to beat your cream and egg for awhile, do not just mix it. I had no problem kneading the dough or shaping it to cut perfect looking scones. I used craisins and toped with Orange Glaze 1 from this site. Wonderful!

Freezer Caramel Drizzle Pie

This pie is great, with a few tweaks! 1. You do not need the condensed milk at all. The cream cheese/cool whip mix is plenty sweet (I used light versions of both). This may also be why my pie did not freeze hard, I could cut straight out of the freezer. 2. I could not justify adding a whole jar of caramel, even with 2 pies. I used about 2 tablespoons on each, and then added about the same with chocolate sauce. I skipped the coconut as I just don't like it, and added the pecans without toasting them. I figured out that this brought the calories down from 500/piece to about 275.
