Easy Mexican Casserole

I agree with the poster who said the tortilla chips on the bottom were too dry. Great expectations here but the recipe as written didn't measure-up. Am using some enchilada sauce on the left-overs.

Paleo Pancakes

These were pretty tasty. Reminded me of pumpkin bread. The batter was way too thick and I added additional water till it was spoonable into the skillet. When you can't eat wheat anymore........you look for things to replace it.

Kyle's Favorite Beef Stew

This is a winner! Except for there not being any bacon or salt-pork, it would be called 'boeuf burguigon' (Julia Child would approve)! What I did differently is: no Crockpot in my kitchen large enough for this recipe! I went on-line and found the temps for a Crockpot on high and low and translated it so I could use my oven and a large enameled casserole pot with cover. I also added about 3 tablespoons of catsup but otherwise the ingredients were the same. My oven on 300 degrees took 2.75 hours to cook fork tender. I would adjust down to 275 degrees for a longer cooking.

Indiana Potato Salad

Lord have mercy! This is sooo yummy and swoon worthy! I used half mayonnaise and half sour cream. Dy-no-myte! In trying to cut the cook time down, I lightly browned the onions in the same skillet I used to cook the bacon and drained both. My microwave has a "half-time" feature and I cooked the completed dish at 350 degrees for 15-20 minutes. Everything is already cooked and it just needed for the cheese to melt (used grated cheddar).

Balsamic Roasted Pork Loin

Honee.......this is deserving of all the rave reviews. I happened to have some balsamic vinegar infused with pecan in the cabinet. Wonderful combination of flavors. I had to laugh at the reviewer who say they threw it out before it was even cooked completely. Some people would complain if you hung them with a new rope, don'cha know!

Frenchie's Salad Dressing

Made this as written. HOWEVER: dang but it's sweet! It reminds me of what used to be called Catalina French dressing. I only made half the recipe and am glad cuz it makes a lot. Next time I'll cut the sugar down considerably. I ended up adding some lemon juice to reduce the sweetness.

Exquisite Pizza Sauce

This is my "go to recipe". Generally I make up the spices in a larger quantity and put them in a jar to have ready at a moments notice, and use 2 tsp per 8 oz. can of tomato paste. Sometimes I heat it in a small saucepan, sometimes not. It's not very often that something "quick" is so very good. I don't use the anchovy paste, just a personal choice. PIZZA DOUGH II from this site is my choice for the dough. Thanks to Angie and Stephen for excellent recipes to make fabulous pizza at home.

Famous Meatballs

With a couple of changes this was good. Made more sauce since the can of pineapple was 20 oz. Added some chunked onions along with the bell pepper and pineapple (and a couple tablespoons of maraschino cherries). Made my own meatballs and browned them first. These changes made it like sweet & sour dishes I've had in the past.

Chef John's Buttermilk Biscuits

Excellent recipe. After trying several different ones, I've settled on this as my "go to" recipe. I don't use parchment or brush with buttermilk before baking. Just oil the pan, dip the cut biscuits in the oil and turn over (for a tender top).

Homemade Mac and Cheese

Excellent recipe. I almost decided to not do the bread crumb topping. Glad I did this extra step! Nice crunchy addition. Think next time I won't make a roux but just put the cheese into the heated milk and pour on the macaroni. It was a tad dry. Some of the comments made me laugh. Of course it's full of fat, duh! Not sure about all the additions folks made........but, to each his/her own, eh! The Winter Salad with Lemon Poppy Seed dressing, and Copper Pennies recipes from this site make a wonderful meal (lots of veggies to offset some of that fat)!!

Good New Orleans Creole Gumbo

I was going up against my hubby's gumbo and didn't think I could compare with his. HA! Lawd have mercy, ya'll have come up with a total winner! The step about cooking the okra first in a bit of bacon grease and vinegar was new and different (did it anyway)! Loved the guy who likes to see the crab legs hanging over the edge of the bowls! This kind of comment is what makes Allrecipes the premier site for sharing recipes.

Broccoli Rice Casserole

Restaurant-Style Zuppa Toscana

The flavor is exactly like Olive Garden's soup of the same name. HOWEVER: chicken base is super salty and 2 tablespoons are waaaay too much. (how about 2 teaspoons?) Otherwise, it's a good interpretation of this famous soup.

Crusty Potato Bread

Wonderful loaf! My only changes were I added 2 tbs. extra water as the dough was too dry and wasn't mixing well. Throw all the ingredients into the machine and 3 hours later.........a fabulous loaf of potato bread.

Girlfriend ya' really nailed it! I've been looking for a "white" posole recipe and this one is it. YIPPEE, and it's a cold weather treat. Generally make posole with pork and dried red chiles.

Blackberry Pie I

I doubled the recipe and made a large cobbler. My only changes were a squeezed lemon on top of the berries. I love the fact that it held its' shape when cut. Fruit pies that are too soupy do NOT please me. I used 2 one pound bags of frozen blackberries.
