Strawberry Bread

changes made for a HEALTHY, AMAZING STRAWBERRY BREAD RECIPE: 4 cups of strawberries, 1.5 cups of sugar, 1/2 tsp salt, 1 cup applesauce (instead of oil), 5 egg whites and 1 egg yolk (instead of 4 whole eggs), and omit the pecans, if desired. It was sooo yummy with these changes. I used a bundt pan though, and I had to almost double the baking time. Personally, I like to eat it cold. When it first came out of the oven, I tried it and I thought the strawberries were too sour when they are hot, but the next day after refrigerating it, it was amazing!! The whole family loved it! I'm making this again next week for a potluck and I think I'll put chocolate icing on it with sliced strawberries and bananas on top. :D

Old Fashioned Rice Pudding

Simply put: THE BEST. It tastes exactly like the rice pudding I used to buy at the store (Kozy Shack rice pudding). I changed some things, though: as another reviewer said, I boiled the rice in some water for about 10 minutes, then I proceeded with the recipe. I was afraid that the rice wouldn't be cooked enough, and it turned out really good. I added almost 2 tsp of vanilla, and that really did the trick. However, I didn't add the raisins as I thought it was unnecessary. Soooo good. My whole family loved it. Thanks so much!

Egg-Free Low-Fat Oatmeal Cookies

They were good and healthy. A little too sweet though; maybe cut down on the sugar or raisins next time. Also, it was kind of rubbery... but they were very low in calories, which I liked =)

Eggplant Au Gratin

I love fried eggplant. I had never tried baked eggplant before, so I decided to give it a shot. I halved the recipe because I only wanted to try it out, and I also skipped the olive oil (to lower the fat content) and just baked the eggplant on a baking sheet for 9 minutes each side at 350 degrees F. I used half of everything else, and when I ate it, I thought it was okay. The taste wasn't too special or anything, but that's just my opinion.

Popovers

i have never made popovers before, so i didn't know what to expect. i followed the instructions as is, but i halved the recipe and i had to take them out of the oven 10 or 15 minutes earlier, because they were going to burn (probably because i forgot that i halfed it, oops). i put it on the middle rack and used muffin paper cups. it was dark brown on the outside and yellow and hollow on the inside. the popovers stuck to the muffin paper cups (i should have greased them). maybe i will try this one again another day. but i'm wondering what to eat/serve it with?

Cinnamon Carrot Bread

as a healthy eater, i made several changes and this turned out really great =) I used only 1/2 cup white sugar, 3/4 cup applesauce instead of oil, only 1.5 cups of flour, 2 tsp of cinnamon, 2 egg whites, and 3/4 tsp vanilla extract. for the carrots, I used 2 cups, but I chopped them and boiled them for about 10 minutes, then made CARROT PUREE in a blender (with about 1/4 cup of water or more). needless to say, it turned out great! i sprinkled some extra white sugar on top and served it to my family; it was gone pretty quickly!

Healthy Banana Cookies

Egg-free, dairy-free, oil-free, and almost fat-free (if you used applesauce)!This is probably the healthiest cookie recipe in the entire world. Here are some changes I made: 1/3 cup applesauce instead of oil, 3/4 cup raisins instead of the dates, and I added 5 tsp. of honey. I made about 17 cookies 3-inch in diameter, and they come up to around only 90 calories each with no fat at all!! If you're a health freak, you'll love 'em, but I don't suggest offering it to anyone else because it does taste a little rubbery/not-so-cookie-like. The bananas were a little bit too much (I used 3 medium) so next time I think I'll use 2 and a half. Also I will try adding cinnamon and peanut butter! Great recipe, thanks so much for sharing.

Mango Shortbread Bars

Though I am a health-conscious eater, this is an amazing recipe. The shortbread bars are just so delicious and scrumptious. The 60 minute baking time is perfect for that slight golden brown crisp. However, I used only 3.5 cups of mango (they were a little stringy but turned out great), only 1 teaspoon of cinnamon, and no nutmeg (I felt it was unnecessary because the cinnamon already spices the mango up). The most difficult part was slicing the mangoes. It took me about 1 hour to slice 4 medium-large mangoes, and it was a really big mess. I sliced them pretty thin, about 2-3 inches long and 0.5 inch wide. I was not familiar with baking shortbreads, so while I mixed the flour, butter, and sugar together I thought the mixture was too dry and began to panic.. but turns out it was supposed to be crumbly and crispy. Make sure you firmly press the flour mixture on the pan, and then evenly spread the mango mixture, then just use your hands and make the flour mixture into crumbs and sprinkle it on top of the mango. Press down lightly. Next time, I will try to substitute the butter for something else, possibly half olive oil and half butter. Also, because this shortbread reminds me of pie, on Thanksgiving or Christmas I will try substituting the mango for pumpkin and bake it in a round dish, see how that turns out :) I will definitely be making this again. Thanks for sharing this wonderful recipe with us!
