Easy Mashed Potato and Roasted Vegetable Enchiladas

As recommended I added cumin and Chili powder to veggies, and since I do not like instant potatoes we substituted homemade mashed potatoes. Flavor seemed off and I loved nothing about it. Likely will not make again.

Marinated Grilled Shrimp

Turkey and Quinoa Meatloaf

FANTASTIC! I literally think I like this more than traditional meatloaf. I followed directions exactly, the only thing I changed was I added 1 cup of cheddar cheese. Yum yum yum!

Best Chicken Ever

followed directions exactly, cooked the chicken for only 40 minutes and took it out to check how much longer to cook it and it was already way dry. :-( And I only cooked it at 315F instead of 350F! I felt like the seasoning was lacking, Next time I would try using ranch seasoning and maybe using mayonnaise instead of sour cream.

Baked Dijon Salmon

I followed the directions exactly except we only have spicy brown mustard which I assume is basically the same thing? Anyways it was amazing! This is now my top oven baked salmon recipe!

Pumpkin Muffins II

I made these in the summer so I used canned pumpkin puree. We already had a 29oz container so I doubled the recipe and it made 3 dozen muffins. Other than the puree I followed the directions exactly and they were amazing! My 2 year old devoured his!

Green Pozole

Didn't have a pasilla chile available to I let that our of the recipes, and didn't have Mexican oregano so used regular oregano, otherwise followed the ingredients exactly. I ended up having to meet my Mother-in-Law in the Emergency Department and so the soup cooked on low for 12 hours. The meet was definitely dry but the flavors were still delicious. I have no doubt that if I made it again with the appropriate cook time that I would beg my hubby to let me cook this at least once a month (we only repeat recipes every 4-6 months usually).

Blackberry Cobbler II

Per other reviews I doubled the topping and added cinnamon to both topping and blackberries. It was DELICIOUS! However, everyone that ate it had a bright blue tongue and teeth and even brushing didn't help?

Jersey Fresh Tomato Soup

I rated it as a 5 star for a vegetable soup, but if you're looking for a traditional tomato soup (like grilled cheese sandwich and tomato soup) than this isn't quite it. As for the soup itself it was very yummy. We only use almond milk at our house and it still came out great. Made everything else exactly as directed.

World's Best Lasagna

Followed directions almost exactly. I used italian stewed tomatoes and chopped them up before adding to the sauce. I accidentally added all 3 tbs of parsley to the sauce so added an additional tbs to the ricotta cheese which I thought still came out great. We have a basil plant so I used fresh basil instead of dried. I also soaked the lasagna noodles in hot tap water for 30 minutes in the same pan I was going to bake the lasagna in so I didn't have extra dishes. Soaking softens them, but makes them easier to handle then boiling. I cooked sauce for about 5 hours and once putting everything together let it sit for about 2 hours before cooking so flavors could all combine. DELICIOUS! I have my parents over for dinner and they were both blown away. I felt like it may have been a little meaty for my taste and would prefer a little more ricotta cheese. I'm also a huge veggie fan so I'm considering either adding spinach to the meat sauce or zucchini. So excited to have come across this recipe!

Belle's Hamburger Buns

I had to make these twice because they were far too dense the first time around. After reading more reviews I learned two important things that really made these turn out perfect. 1. read the instructions on the yeast packet. The instructions in the recipe say to let the heated liquids cool until look warm, however my yeast said to add flour mixture when liquid is 120*-130*F. 2. Slowly add the flour near the end until you have the dough at a slightly sticky texture. If you squeeze it between your fingers it should stick and then come off after a second or so. We've tried these with hamburgers and sandwiches and they are great!

Rosemary Ranch Chicken Kabobs

I followed the directions exactly. Marinated overnight. Very juicy, my 2 year old LOVED these. My husband and I just weren't especially impressed. We served them at a BBQ with half of the ranch kabobs and half with just chicken with store bought BBQ sauce on them and most people said they liked the BBQ better. After reading all the reviews I was super excited to try them, but overall was disappointed.

Corn on the Grill

soaked the corn for about 15 minutes in water to make sure they were nice and moist. then peeled off extra husks so there was just enough to cover the corn. Removed all the silk and brushed with seasonings, re-wrapped with husks and grilled. Very juicy and tasty. We added parmesan and tapatio hot sauce after cooking. This is the way I like my corn, my hubby still preferred traditional corn on the cobb without all the seasoning.

Grilled Potatoes and Onion

delicious! I followed directions exactly, next time I think i will add a few herbs to it to increase the flavor. I really enjoyed the potatoes as long as there was a bite of onion with them, alone we found it a little bland.
