Soft Caramel Corn

I can't believe I haven't rated this yet! This is probably my favorite recipe- ever. It is so easy and I would guess pretty hard to mess up. I usually make it exactly as it is written, but have changed it up as well. If I don't have microwave popcorn, I use air popped. I just add 1/2 t of sea salt to the caramel. I don't measure a specific amount of popcorn. I make a huge bowl and then can use as much popcorn as I want (based on how caramel-y I would like the batch to be.) I have also halfed the recipe. Sometimes I add 1t vanilla after the caramel is cooked (before pouring onto the popcorn.) This recipe is addicting and everyone who has ever tried it- LOVES it.

Snicky Snackies

Great snack. Super easy. My kids loved it. I was confused about why there were so many 4 star ratings without anything being really wrong with the recipe. I was nervous to try it out because of it. Although this recipe was VERY good and very easy... it will probably not blow anyone away. Just very good. I do plan on making it again and highly recommend it.

Sweetheart Cupcakes

This rating is based off of the total presentation of the recipe, not the taste. It tastes like a box cake, but I understood it would when I made these. They could always be made from scratch if you are willing to put in the extra work! I brought these to a superbowl party and everyone was impressed with how cute they were. With a great frosting and the beautiful presentation, a 5 star recipe.

Easy Portobello Mushroom Saute

These were delicious, but the amount of oil the recipe calls for was too much in my opinion. I reduced the oil to 1 tablespoon and added fresh garlic instead of using garlic flavored oil. With these changes, this 5 star recipe.

Babe Ruth Bars

These are delicious and so easy. I whipped them up in under 10 minutes. I made a couple of changes based on the ingredients in my house. I did not have any white sugar (ahhh!!!). I substituted it for another 1/4 of cup of brown sugar and 1/4 cup of condensed milk. This seemed to work out just fine. Also, my cornflakes were fairly stale, but that did not make any difference. I will be keeping this recipe on hand for a quick and delicious dessert!

Alex's Raw Chocolate Pudding

This is a must try! I was a little apprehensive about trying this recipe, but was not at all disappointed. It was really quick and easy. I made the recipe exactly as written, leaving out the optional coconut. My kids (ages 2 & 4) did eat it, but took a minute to be convinced that it was chocolate pudding. It is best really cold. I put mine in the fridge for an hour and then the freezer for 10 minutes before serving.

Creamy Caramel Flan

This recipe is perfect! I did not change a thing about it. If you hate the gelatin type flan and love the rich creamy type of flan... this is the recipe you are looking for! The only thing I would reccommend is make sure the cream cheese is soft and mixes entirely with the other ingredients. My cream cheese was not mixed thoroughly and there were a few small chunks. Still delicious though! Next time I will just mix long and start with very soft cream cheese.

This recipe is amazing! I made a few small changes just because of personal preferences. I increased the garlic to 5 cloves, increased the kidney beans to 2 cups, decreased the zucchinis to 2, and added 2 fresh tomatoes. I suggest making minor alterations to enjoy it your way!

Cream Cheese Cookie Cups

These were super easy and turned out very cute. I may make them again in a time crunch when I am not trying to show off my culinary skills. The flavor was just okay. If you enjoy store bought cookie dough you will probably really enjoy. I am not a huge fan of premade chocolate chip cookie dough. I will certainly be trying this recipe with sugar cookie dough filled with lemon or lime flavored cream cheese mixture. I believe that could earn an extra star.

These are absolutely perfect! One tip... make sure to use wax paper underneath and remove from wax paper as soon as they come out.
