Zucchini 'Noodles'

I've been making zucchini 'noodles' for my family for a couple of years now because we try to keep our carb intake low. The dollar store sells cheap plastic mandoline's that work very well. I just trim the ends, push the squash through the mandoline, then stack and slice into ribbons. I also don't cook for 30 minutes, I think 10 is plenty.

English Muffins

Really, really excellent recipe. I used a 3" biscuit cutter and felt that they were a little bit small. I also rolled them a little too thin... they were still great. I'd recommend rolling them 1/2 to 3/4 inch thick and use a larger cutter.

Makeover Morning Glory Muffins

Excellent recipe. I don't usually rate recipes, but this one is a keeper. My only change was to microwave the carrots and apples with the juice and applesauce for a few minutes before mixing up, and I omitted the raisins and prunes because I made them for my molar-less toddlers, and I wanted the shreds to be very soft so they could chew them. So much healthier than store bought snack foods, and delicious!!

Perfect Turkey

Excellent! NOTE TO COOKS WHO LEFT NEGATIVE REVIEWS: If you use a 'basted' turkey, you will likely get a very salty, possibly even inedible product... which I'm betting is the reason for at least some of these negative reviews. You should NOT brine a bird that's already been saturated with the salty 'basting' solution that the manufacturer injects and/or soaks these turkeys in. Use a regular fresh or frozen (and properly thawed) bird, and you'll have excellent results!

Cinnabun Cookies

Like pp said, the dough is quite sticky and a bit challenging to handle. I rolled the dough betweeen sheets of plastic wrap, and it worked quite well. The cookies are really unique and really delicious. I'll be making again.

Amazing Italian Lemon Butter Chicken

This is an INCREDIBLE recipe. It's easy, and SO delicious... it's very similar to the Chicken Scallopine served at a popular italian chain restaurant. It's very easy to make minor adjustments to suit your individual taste. I personally like more lemon flavor, so I added a couple of extra Tbsp of lemon juice, and about 1/2 tsp of lemon zest... I also had pancetta available that I used instead of regular bacon. I think it added a slightly more authentic italian flavor, but would be excellent with the regualr bacon as well. NOM!!!
