Cabbage Beef Soup

This soup was awesome - my husband couldn't believe how good it was and healthy too! My mom stopped by and had a bowl and now she wants the recipe too. I like that it is made with tomato-based broth instead of chicken broth. My changes: Instead of kidney beans I used black beans (I had them on hand), I subbed spaghetti sauce instead of tomato sauce (once again what I had on hand), and added some chopped sweet red peppers. It turned out thick, filling and delicious!

Easy Chicken Marsala

I used this recipe as a base and changed a few things around to make it healthier. Instead of using heavy cream and milk I used low fat half and half. I also sprinkled a a little bit of Gorgonzola cheese on top, delicious!

Southwestern Egg Rolls

These egg rolls were beyond good! I used egg roll wrappers instead of tortillas and baked them in the oven at 425 for 15 minutes and they came out crunchy and delicious! I added sliced carrots and omitted the spinach. Definitely a keeper!

Peach Muffins

I loved these muffins - very moist, with a good sour cream peachy flavor. I used peaches that I canned last summer and they turned out great! Thanks for the recipe!

Pumpkin Cheesecake II

I used 1/3 less fat cream cheese, and fat free half and half instead of the whipping cream for my cheesecake - it still turned out wonderful (but it did crack down the middle when cooling in the oven). I'm not sure if this was due to me changing the ingredients or if it was because I didn't use a water bath to cook it. At any rate, I was able to cover it with a pecan glaze (I mixed pumpkin spice ice cream topping and chopped pecans) and no one was the wiser! It still presented beautifully and was completely gone, despite the fact that there were many desserts at this party. I would definitely make this recipe again, next time I will try cooking the cheesecake in a water bath to see if I can prevent the crack. Thanks!

Blueberry Nut Oat Bran Muffins

I omitted the pecans in the batter and instead sprinkled them on top with a little bit of brown sugar (instead of the granola). I also used 1/2 cup of whole wheat flour, and the rest of white flour. These turned out delicious - moist and flavorful (not to mention pretty healthy)! Thanks for a great recipe!

Brown Rice Turkey Soup

This soup turned out wonderful - my guests raved about it. I used homemade turkey stock for the broth and cooked regular brown rice in broth before adding to the soup. I had fresh thyme on hand and used that instead of dried. Thanks for a great recipe to use up leftover turkey!

Linda's Lasagna

The sauce was so delicious! We all enjoyed this lasagna greatly. I did cut back on the mozzarella cheese (used 1/2 lb) and thought it still was cheesy enough. Thanks for a great recipe!

Cream Cheese Filled Pumpkin Muffins

This was a very good moist muffin recipe, I especially love the bite of cream cheese! I substituted half applesauce for the oil to make them a little healthier and omitted the nuts. Thanks for the recipe!

Whole Wheat Blueberry Pancakes

I absolutely loved these and so did my guests - I should have made more! You would barely guess that these pancakes were made with all whole wheat flour! I used fresh blueberries and substituted 1/4 cup brown sugar Splenda. I served these with Citrus Wild Blueberry Sauce from this site - that went really well. Thanks for the recipe!

Easy Granola Bars

These were so delicious! I used 1 cup of almond slivers and shopped pecans, 1/4 cup ground flax seed, 3/4 cup dried cherries, blueberries and cranberries, and 1 cup of mini choc chips. I can't stop eating this! I plan on taking this on our vacation next week, hiking in the Smoky Mountains. These bars are way better than anything I've had from the store. Thanks for a great and easy recipe!
