Camp Cornbread

Very tasty! I put a whole can of creamed corn in (15 oz) and left out the sugar. It came out perfectly. Delish! I'll never make cornbread without the addition of creamed corn again. :)

Real Hummus

An amazing garlic hummus! I used only 3 tbsp of lemon juice and didn't find a need for the olive oil or any salt or seasonings. Perfect with just one 16oz can garbanzo beans, some juice to make it creamy in the blender, 2 cloves garlic, 3 tbsp lemon juice, and 3 tbsp tahini. So yummy with warm whole wheat pita bread and took all of 5 minutes to make!

Honey Chicken Stir-Fry

Amazing recipe! I used fresh broccoli as my only veggie and doubled the sauce so I'd have plenty to go around. Delicious with basmati rice. My husband said it was even better than the Chinese take-out place! Wooohooo! Healthier and cheaper too.

Simple recipe that makes a wonderful butter cookie with a sweet fruit middle. Only made about 30 cookies for me. These would go great with hot tea!

The Best Veggie Sandwich

I made these on a whole wheat pita and liked it very much! The ranch dressing totally makes it and don't forget to salt and pepper the slice of tomato. Mmmmm! Will definitely make again.

Hearty Vegetable Lasagna

Super recipe! I tweaked it a lot and I love the way it came out. I used lowfat cottage cheese in place of the ricotta and added 1/2 C of chopped zucchini, shredded carrot, broccoli, and spinach. I used olive oil in place of the veg oil and a red bell pepper in place of the green. The extra veggies led to a little extra sauce left over that I didn't use. I also used the lasagna noodles that you dont have to boil beforehand and they were very flavorful as they soaked up some of the sauce while baking. A healthy way to sneak in some of those good vegetables!

Black Beans and Rice

Wonderful recipe! I can't believe it's good for me! I used instant brown rice and just cut the cooking time from 20 minutes to 5 minutes as per the rice box. Because I used instant rice the whole dish took me a grand total of 15 minutes to make including prep time! Health and simplicity - you've got to love that. This could be served in a warm flour tortilla with chopped tomatoes, a few chives, and a bit of light sour cream. Mmmm!

Coconut Cream Pound Cake

Excellent pound cake! I didn't have a tube pan so I just used two 9" loaf pans and things turned out wonderfully. I had to cook it an extra 10 minutes and though the cake didn't need it, I frosted one with some vanilla icing mixed with the leftover shredded coconut. A hit with everyone (even those who don't like coconut) and very easy to make!

Famous Butter Chicken

This one is a keeper for sure! I'm 22 years old and a struggling cook in the kitchen. This dish turned out perfectly! I think a big trick to cooking any kind of meat is not to overcook. I took the chicken out 5 minutes early and it was perfectly cooked - plump and juicy.

Oven Fries

Yum! I was very surprised at how these turned out. The first round I totally charred the bottoms but the second time I flipped halfway through. Don't forget to flip them at the 15 minute mark!
