Cindy's Awesome Clam Chowder

Reviewed: Sep. 11, 2010
Just made this chowder - AWESOME! Made it exactly as directed. Might add another can of clams next time. Used Fat Free Half & Half (creamy and no loss of taste). Thank you for sharing the recipe!

Washabinaros Chili

This Chili is the BEST! My family loved it and asked for extra helpings! Follow the recipe as written - don't leave anything out - the dark beer and wasabi paste is a must! Nice and spicy with a hint of sweet which is exactly how we like our chili.

Gerry's Chicken Enchiladas

Reviewed: Feb. 18, 2007
LOVED THIS RECIPE! I did make a few changes: 1) I used 1/2 of a poblano pepper(diced) instead of chili peppers. 2)used flour tortillas instead of corn and did not dip them in heavy cream. 3)marinated chicken in 1/4 cup lime juice, 1/4 cup soy sauce, 2 cloves minced garlic. 4)used red enchilada sauce, as recipe did not specify red or green. I served w/ mexican rice and sour cream on the side. My family LOVED these - my son was disappointed there were no leftovers for the next day!

Boilermaker Tailgate Chili

SOOOOO Good! I used a poblano pepper, and chipotle flavored Tabasco sauce. I cut the recipe in half and only used 1 can of beans though. Other than that I made the recipe pretty much as given. This is the best Chili recipe I have found on this site!

Chicken Enchilada Dip

Reviewed: Dec. 13, 2004
Most Excellent! 5 star rating is with my alterations: Used an extra can of green chilies, plus extra jalapeno for more zip! Cut back a bit on the mayo, used chunk white chicken breast meat (canned) mixed with 2 tsp taco seasoning, a couple dashes of cumin and garlic powder.

Blue Cheese Dip II

Excellent! Simple! Easy and quick to prepare! I added extra blue cheese crumbles and made the night before to blend flavors. Served with crackers. I took this to an office holiday party and several people asked me for the recipe!

Honey Curried Roasted Chicken and Vegetables

Reviewed: Oct. 30, 2004
WOW - what a great recipe! My changes: I used bone-in chicken breasts instead of a whole chicken. Instead of baking it plain, I coated them with "A Taste of Thai" spicy peanut chicken coating mix which comes 2 envelopes per box. I Added 1 Tbs curry powder to each envelope of coating, shook the chicken pieces in the mixture and baked. I doubled the honey-curry sauce mix recipe, but only used 3 Tbs butter as 6 seemed way too much. I added sweet potatoes in addition to the carrots, mushrooms, potatoes, and apples. My family went nuts - they loved this recipe!

Chicken Milano

Reviewed: Sep. 25, 2004
A GRAND recipe! I doubled the sun dried tomatoes, used 1 can chicken broth, and 1.5 cups heavy cream. I cut the chicken into bite-sized pieces, sauteed until done, and then added to sauce. I also thickened the sauce before serving with a cornstarch and water mixture. Added 1/2 tsp crushed red pepper to spice things up - was SO SO DELICIOUS!!!

Fusion Chili

Reviewed: Sep. 21, 2004
GREAT CHILI! This is one of the most flavorful chili's I've ever made - my family loved it! I also added several dried Chipotle peppers (prepared the same way as the Ancho) for a slight smoky flavor with a spicy kick. I also added diced green and red pepper. I only used about 1.5 lbs of hot italian sausage plus the 3# of ground beef. It is very thick so you might want to add some water or tomato sauce if you don't like it that dense. Don't leave anything out of this recipe as every ingredient adds it's own special flavor! WONDERFUL - Thank You for sharing it!

Jambalaya Salad

Reviewed: May 26, 2003
A little disappointed after reading the reviews. I expected a bit more "Creole" taste. It basically tasted like rice, shrimp, and italian dressing. Overall not a bad recipe, but I might add some New Orleans flavoring next time to spice it up.

Excellent! I made it the night before to "blend" the flavors. Brought it to a picnic and had many compliments. I did not change or amend the recipe at all and it turned out very yummy!

Italian Sausage Soup with Tortellini

This is a wonderful, hearty, tasty soup! I have made it several times already. I use hot italian sausage as my family likes a little zip! I followed the recipe exactly, and fresh herbs really make a difference. Highly recommended!!

Armadillo Eggs

Reviewed: Dec. 22, 2002
I gave this only 3 stars because I had to make modifications, and the recipe is very time consuming. The batter was too dry, so I had to add 1/4 cup milk. You need to use very small jalapeno's or the "balls" come out way too big. The monterey jack cheese doesn't have much flavor so I would definately recommend sharp cheddar or maybe even cream cheese. Needs more flavor overall.

Rum and Sweet Potato Casserole

This was a HUGE hit at Thanksgiving dinner! I cut back on the rum slightly as I was afraid of overpowering the sweet potatoes. The pecan topping was fantastic! An outstanding dish - will definately make again next year!

Awesome Sausage, Apple and Cranberry Stuffing

Reviewed: Dec. 4, 2002
Most Excellent! I used Bob Evans Sage sausage instead of turkey sausage and it was fantastic. The apples, cranberries and sausage make a wonderful flavor combination! I didn't have unsalted butter so I used regular and it didn't seem to make a difference. I will make this again next Thanksgiving!

Chicken Tequila Fettuccini

Reviewed: Nov. 22, 2002
WOW! I made this tonight and my husband LOVED it! We are spicy food lovers so I added extra jalapeno pepper for an extra kick! The only change I made was I used half & half instead of heavy cream. I would not recommend dried cilantro - use fresh, as it makes a big difference in taste. Will make again soon and might try adding cheddar cheese!
