Coconut-Curry Lentil Stew Served over Quinoa

DEE-LISH-US!! Dare I mention that I used a can of diced tomatoes and instead of the spices I used 3 tbsp of tandoori masala? It was so delicious - my seven year old and 12 year old boys both loved it, and in fact my 12 year old asked for seconds and took a helping in his lunch (which I made with brown rice since we had eaten all of the quinoa for supper). First time any of us had eaten quinoa but I will most definitely make this dish again...and soon.

Penne Tuscana with Spinach

Delicious! Made this on short notice when I didn't know what to make for dinner and it was really good. I didn't use fresh rosemary or parsley, and I didn't discard the garlic after sauteeing it with the rosemary as the recipe says, because we love garlic. I didn't have any pinenuts but I did have a small bagged salad topper that was a mix of pumpkin seeds, sunflower seeds and pinenuts and I threw it in (without roasting them) and it was delicious all around. I would definitely make this again because of it's simplicity, quickness and healthiness

Asparagus Angel Hair Pasta

Yes I am modifying this a bit but I am not going to pay for a membership so that I can "customize recipe". My family loves this but I basically follow the recipe up until the dill weed. I don't use any of the ingredients starting with the dill weed and below. I used at least 3 or 4 cloves of garlic. After draining the pasta and when the asparagus mixture is ready in my deep skillet, I put the pasta right back into the skillet with the asparagus and tomatoes and chicken broth. Since there is no real source of protein here I serve it with something, like fish or chicken. We love it.

Awesome Slow Cooker Pot Roast

The only recipe I use for roast beef now. I don't change the recipe at all and I don't brown the roast first. Don't worry, it is still browned when it's all finished cooking in the slow cooker!

Janet's Rich Banana Bread

This recipe is wicked! The inside was perfectly moist with the outer edge slightly crunchy and slightly sweet. I mashed the bananas, did not slice them. And I did not use a mixer (in case anyone is wondering whether or not to use one); I mixed the butter (semi-melted) and the sugar with a wooden spoon and then used a wisk. Oh - and on the suggestion of another reviewer, I doubled the recipe (I had four good sized bananas I wanted to use) and baked it in a bundt pan and it turned out perfect. And I have lots o' banana bread! :)

Chocolate Chip Banana Muffins

The only change I made was I used vanilla yogurt because I didn't have any plain yogurt on hand and I used a bit less oil, but they still turned out delish! Husband and kids loved them - this is the recipe I will use from now on. :)

Garden Pasta Salad

A really, delicious and refreshing salad. I did find it better with Italian salad dressing rather than "zesty" Italian salad dressing, which I used the first time I made it - it seems to be too vinegar-y with the zesty dressing. I will make this salad regularly - every one in my family loves it.

Crispy Oven-Roasted Rosemary Chicken with Sausage and Potatoes

Delicious! I used the Schneider's Grill 'Ems (precooked sausages) because I love the taste of them. I also completely forgot to add the red wine vinegar and it was still delicious. I'm going to make it today and will add the vinegar. So simple and so good.
